Your enchiladas sound good, my tip that I use is instead of taking each tortilla and frying in a pan with a small amount of oil until soft, I brush each tortilla (10) at a time and put them on a cookie sheet and put them in a 325 degree oven for about 5 minutes. It saves a lot of time and they come out just fine, nice and soft and pliable. Don't forget to lay them on a paper towel to drain excess oil. Good luck and have a great dinner. Oh, I forgot to say that I brush them with oil.

That sounds great - if you are using corn tortillas - I fry them in oil for just a few seconds to make them soft and roll. Terri Jo Lorz
