Yellow Cake Mix Ideas?

I am making a birthday cake for the VP of the company I work for. He told me to make whatever I felt like, so I have decided to do a yellow cake with chocolate frosting, something everyone will eat. I have tons of cake recipes but I would like one that comes out extremely moist, not all dry and crumbly like the last yellow cake I made. Any suggestions or recipes are appreciated. Thanks in advance.
By the way I have to make the cake Thursday night, his b-day is Friday.

Make a boxed cake mix... Follow the directions on the box, but replace the oil with apple sauce... The same amount...

It will yield a very moist, and slightly more healthy cake...

I went to 4 years of culinary school at johnson and wales, and have made cakes in every way shape or form, but I still make my birthday cake out of a box... It just tastes better...

As for the Icing I like to keep it simple too... Cream Cheese, Whipped Cream, Powdered Sugar, and good chocolate melted on a double boiler...

use a cake mix - nothing beats it. However, if you do use a regular recipe make sure you use CAKE FLOUR (like swan's down sold in the grocery store) - you will notice a HUGE difference. The best chocolate frosting recipe I've seen is on the Nestle cocoa box - it's called Chocolate Lover's Frosting (it's also on their website)

Honestly, I have a weight watchers recipe that's out of this world!!! And I won't take offense if you don't think it sounds good....

take a yellow cake mix... and a 20oz bottle of Diet Sprite/7up.

Mix together. That's it. Nothing else.

Put in a lightly sprayed 9x13 pan and bake for 40 minutes at 350 degrees. (You may need to adjust bake time depending on elevation.)

I love to make that, and then sometimes, use drained crushed pineapple.

When I use a box cake mix, I always substitute some other form of liquid for the water....I make a great pineapple upside down cake and use pineapple juice...talk about moist...to give it a little flavor/moisture try using something besides water for the liquid...use your imagination...you will be surprised what will happen....

go to your favorite supermarket and buy a yellow cake mix. I think duncun hines is the best.

If you put a layer of anykind of jelly inbetween the cakes it gives it great flavor and makes it totally moist. I get rave reviews..also if you want it to stay just choclolate put chocolate pudding with a dash of rum or brandy and a tsp of almond extract in it...(you can use cherry or vanilla) in the middle which also makes it wonderful..smooth a thick layer in the middle not going to the edge and then frosting ring around it to hold the pudding or fruit in so you can frost it normally....again, rave reviews mostly the choc with the rum and almond flavoring...the one with choc pudding, with cherry flavor and cherry brandy, with dark choc frosting and marchino cherrys on top was a big hit...all moist all delicious! hope it helps

I agree with using a cake mix. Be sure it's one that has pudding in the mix or uses butter. Then make a chocolate ganache for the frosting with really good chocolate.

For the ganache:
1/2 cup heavy cream
8 ounces good semisweet chocolate chips
1 teaspoon instant coffee granules

Cook the heavy cream, chocolate chips, and instant coffee in the top of a double boiler over simmering water until smooth and warm, stirring occasionally.

You can let this sit to make it thicker, and the coffee enhances the chocolate taste, but really isn't enough to make it taste too "mocha".

Here are a few that I have tried off the internet before that were really good and moist. They were all really easy to make and very delicious.

I use Jello in the batter... It comes out moist and pretty...Go to Kraftfood.com and check out all the different cake recipies... I just made a strawberry swirl/ w/ cool whip frosting that was easy and tasted awesome...

Sherry WIne Cake is my fav using yellow cake mix. It's not with chocolate but it's easy and I'm always asked for the recipe.

Yellow Cake Mix - I prefer Duncan Heinz
3/4 cup sherry wine
3/4 cup vegetable oil
4 eggs
2 tablespoons ground nutmeg
1 teaspoon vanilla extract

Mix above ingredients and bake as directed on cake box. It's a pretty cake in a Bundt pan.

Let cool, remove from pan if desired. pour lemon frosting glaze over the top.

Glaze:
2 cups confectioners sugar (powdered)
lemon juice

slowly add lemon juice to sugar and stir until desired consistancy, doesnt take much. should be a thick but pourable glaze. To avoid lumps slightly heat lemon juice.
