Anyone have a great recipe or marinade that is quick for summer BBQs?


Answers:
One quarter cup apple cider vinegar
Three tablespoons prepared coarse-ground mustard (like Dijon)
Three cloves garlic, peeled and minced
One lime, juiced (and sliced, and thrown in)
Half a lemon, juiced (and sliced and thrown in)
Half a cup dark brown sugar
One medium onion, sliced
One and a half teaspoons kosher salt
Six tablespoons olive or vegetable oil
Ground black pepper to taste

In a large container thoroughly mix cider vinegar, whole grain mustard, garlic, lime n lemon juice, brown sugar n salt. Whisk in olive oil n pepper. Rinse chicken n pat it dry, put it in a large Ziploc bag n pour the marinade over it. Refrigerate 2 to 4 hours.

(a bottle of Texas Pete never hurt, either - I love chicken marinated in Texas Pete plus vinegar, caramelized onion, lemon and brown sugar - if you use pineapple juice don't marinate as long, it's really acidic. You can use anything - soy sauce, Worcestershire sauce .. depending on your tastes. I never put tomato based sauces on meat before they hit the grill, just after .. and I like to use horseradish and mustard on beef!)

If you want to baste with the sauce or serve it with the meat, put it on the stove and boil it (rapidly) for a bit after marinating.

Really, really quick - A bottle of Italian dressing studded up with some soy or hot sauce, fresh garlic and some lemon slices.

A quick, simple marinade I use for my ribs:

One part Worschteshire
One part Apple Cide Vinegar
Pinch of Sea Salt
Pepper

This one is great on flank steak

1/4 cup lime juice
1/4 cup soy sauce
2 tbs honey
1 tsp grated fresh ginger

Quick Chinese BBQ Marinade

1/3 cup honey
1/3 cup ketchup
1/3 cup soy sauce
three dashes of Tabasco (optional)

Italian Salad Dressing.

I used Kraft Raspberry Vinaigrette one time for chicken and it was wonderful.

this one is good for any meat.
1/2 cup Italian dressing
1/8 cup Worcester sauce
2 T brown sugar
1/4 cup water
3 T vinegar (cider is best)
place meat in zip bag with mixed ingredients and marinade at least one hour or overnight

TERIYAKI BBQ MARINADE SAUCE

1/4 c. salad oil
1/4 c. Kikkoman soy sauce
1/2 tsp. white pepper
2 tbsp. catsup
1 tbsp. cider vinegar
2 cloves minced garlic (I use the jar type)

Combine all ingredients in jar and shake thoroughly. Pour marinade over: chicken or pork chops or beef for kabobs and allow to marinate for minimum of 12 hours (24 hours recommended) in a covered container in the refrigerator. Brush on additional sauce while grilling.
Multiply the ingredients 4x for 6 to 8 chicken pieces.

I also use this marinade for chicken then grill it...turns out wonderful!



Shrimp on the Barbie

Jumbo shrimp (10 to 15 count)

Marinade:
1/2 cup vegetable oil
1/4 cup white vinegar
1/4 cup orange juice
1/4 cup canned sweetened coconut cream
1/4 cup pineapple juice
1 teaspoon ground ginger
1 teaspoon ground cinnamon
2 tablespoons soy sauce
1 good shake hot sauce

Combine all marinade ingredients.

Soak uncooked and unshelled shrimp in marinade for 1 to 1 1/2 hours turning periodically.

Place on hot grill and cook until just pink and blackened on the outside.
