Meal suggestions with left over chicken??

I had a huge BBQ yesterday and we cooked a ten pound chicken and I'm up to me ears in left over chicken! Does anyone have a suggestion as to what I could make tonight for dinner with the left overs??

cut up the chicken into strips spray a pan with cooking spray add the chicken and add some frozen or fresh veggies toss in a couple spices and ooh la la you have chicken stir fry!

wow ten ound chicken, thats huge, lol... try making a casserole or steoup, or one of my favorites, chicken pot pie.

Chicken, corn tortillas, black beans & Mexi-corn are layered with Mexican-blend cheeses in a cream cheese & condensed soup mixture. Ingredients:
? 4 oz. (reduced-fat) cream cheese, softened
? 1 can cream of chicken soup
? 1 can cream of mushroom soup
? 1 teaspoon ground cumin
? 2 cups (low-fat) milk
? 1 can black beans, drained and rinsed
? 1 can Mexi-corn, drained
? 1 bunch green onions, chopped
? 1 small can diced green chilies, drained
? 1 small can sliced black olives, drained
? 6 corn tortillas
? 2 large cans white chicken meat, drained OR 4 chicken breasts, cooked & chopped
? 3 cups shredded Mexican-blend cheese
? Salsa & sliced avocados
Method:
In one bowl, mix cream cheese, soups & cumin; gradually stir in milk. In another bowl, mix black beans, corn, onions, chilies, and black olives. Stack the tortillas and cut into six wedges. Spread a little of the soup mixture in bottom of 9x13 baking dish. Layer half of the wedges onto soup mixture in the dish; top with half of the black bean-corn mixture. Add a layer of half of the chopped chicken. Continue layering with half of the remaining soup mixture and half of the cheese. Repeat layers. At this point the casserole may be refrigerated overnight or frozen up to 3 months and thawed in refrigerator before baking. Bake about 30 minutes at 350 degrees. (Bake longer if casserole has been in refrigerator.) Serve with salsa and avocado slices.

do a stir-fry, its quick and easy and all you need is a bottle of that gloppy sauce stuff fro a shop and you're away! very tasty too, especially with poppadoms or naan bread depending on your chosen sauce!)

my personal favourites are sweet and sour sauce or tikka masala/korma sauce (mild but tasty with the chicken!)

chicken salad... and great for lunch too!!

BBQ chcicken Gumbo

make a roux using equal parts flour and oil
stiring constantly while having a fav bev,
roux is good when 2nd bev is consumed..
add water or stck to rouz(careful...we call this stage,,cajun napalm stage),add a tad of liquid smoke,some kitchen bouquet, some woo sauce, some chopped okra,most any vegetables you has on hand and the leftover chicken thats been debones and chopped,add some conecuh sausage,and some shrimp too if you want. at this point make a pot of rice. when the rice is done the gumbo is done,Oh yeah dat some good gumbo,Last thanksgiving I made a simular gumbo out of what was left over from frying a large turkey bird. and some braised deer meat.

You could make a stir fry or a BBQ chicken
pizza.

VEGGIE-PACKED LEFTOVER CHICKEN CHOWDER

5 carrots
1 can corn
1/2 pound cooked chicken breast
1 large onion
1/2 head broccoli
3 medium sized potatoes
1 bell pepper (any color)
1 large tomato
1 stick of butter
cheese
1 packet of beef Stroganoff sauce mix
1 cube of chicken and tomato bouillon
leftover mashed potatoes (optional)
2 cups of milk

Chop all ingredients very small.
Saute onions and pepper in heated pot with olive oil. Add broccoli, carrots, potatoes, tomato and chicken.

Stir in the sauce mix and bouillon, then pour in the milk, mixing ingredients well. Add the stick of butter.

Add mashed potatoes and cook until potatoes and carrots are tender.

Garnish with cheese and serve.


LEFTOVER CHICKEN OR STEAK FAJITAS

4 c. precooked chicken or beef, cut up
1/3 c. lime juice
1 clove garlic, cut in sm. pieces
1/2 tsp. pepper
8 flour tortillas, warmed
2 c. shredded lettuce
2 c. chopped tomatoes
1/2 c. sliced onion
1/2 c. shredded cheese
1/2 tsp. garlic salt

Place meat in a plastic bag or place flat on the bottom of a pan. Sprinkle with lime juice, garlic, salt and pepper. Tie bag securely or cover pan tightly and marinate in refrigerator 6-8 hours. Drain, discard marinade.
To serve cold: Place equal amounts of meat, lettuce, tomatoes, onions and cheese on each tortilla.

To serve hot: Broil heat, onion, garlic and tomatoes in a heavy non-stick pan 5-7 minutes at medium high heat, turning occasionally. Serve on lettuce and top with cheese.

CHICKEN NOODLE CASSEROLE

1 c. or more leftover chicken or 1 can boned chicken
1/2 bag flat big noodles, cooked
1 can cream of chicken or mushroom soup
Parsley
Salt to taste
Pepper
1 onion

1. Put layer of cooked noodles in greased casserole. Layers of noodles, chicken, thinly sliced onion.
2. Stir in 1 can soup undiluted into casserole. Put bits of cut up onion on top. Sprinkle parsley on top. Salt and pepper.

3. Bake at 350 degrees for 1/2 hour.

Chicken salad, just add mayo, onion, celery, pickles, boiled eggs and whatever you want. Good w/ crackers, sandwiches or on top of a green salad.........yum yum yum.......what time is dinner?

Cooked chicken (take it off the bone) freezes great for latter use

Butt if you want to use it tonight...

shred, mix with BBQ sauce, heat and serve on buns with cole slaw and corn for a simple meal

layer shredded chicken, cooked bacon, broccoli, honey mustard, and cheddar cheese, broil till cheese is brown and bubbly, serve with fresh fruit

mix chopped chicken with mayo, red onion, celery, dried cranberries, pecans and curry powder - serve over leafy green salad

I know this sounds boring BUT chicken salad, however, instead of making it just 'regular old' do it different. Use yogurt instead of mayo, scallion instead of regular onion, and add halved grapes, water chestnuts and almond match-sticks. Salt and pepper and your good to go. Serve it on a hollowed-out baguette instead of regular white bread. You can make potato wedges for a side dish.

Just skip the cooking chicken part and throw it in the skillet without the oil.

Chicken Enchilada Skillet

1 tablespoon oil
1 pound boneless skinless chicken breasts, cut bite-sized
1 14.5oz. can fat-free chicken broth
1/4 cup ranch dressing
2 tablespoons flour
6 flour tortillas, cut into small pieces
1 cup shredded four cheese
1/2 cup salsa

Heat oil in large deep skillet on medium-high heat. Add chicken; cook 7 minutes or until cooked through, stirring occasionally.

Mix broth, dressing and flour until well blended; gradually add to chicken, stirring constantly. Bring to boil. Reduce heat to medium-low; simmer 3 minutes. Add tortillas; stir to combine.

Sprink with cheese; cover. Simmer 3 to 5 minutes or until cheese is melted. Top with salsa.

Lol. I love chicken and never come up with the same recipe ever !!You have many options ... chicken chili, chicken enchiladas, chicken salad. chicken n rice, chicken noodle soup the list is endless !!
