How do you make the perfect beef sauce?

Mine has either too much water, or the beef is kinda burned or not cooked enough...

BEEF SAUCE WITH MUSHROOMS:

1 tbsp. butter
1 c. sliced fresh mushrooms
1 c. beef broth
1 1/2 tsp. cornstarch
1/4 tsp. salt
2 dashes pepper
1 tbsp. thinly sliced green onion tops

Melt butter in medium saucepan over medium-high heat. Add mushrooms; cook and stir 5 minutes. Remove and reserve. Add cooking liquid, cornstarch, salt and pepper to pan. Bring to a boil; cook and stir until thickened, 1 to 2 minutes. Remove from heat. Stir in reserved mushrooms and the green onion.

BEEF GRAVY MIX

1 c. instant non-fat milk powder
1/2 c. flour
2 tbsp. instant beef bouillon granules
1 1/2 tsp. dried thyme, crushed
1 tsp. dried rosemary, crushed
1/2 tsp. ground sage
1/2 tsp. freshly ground black pepper
1/2 c. unsalted butter
3 tsp. brown sauce for gravy

1. In a bowl, stir together the milk powder, flour, beef bouillon granules, thyme, rosemary, sage and pepper. Cut in the butter until completely blended. Stir in the brown sauce with a fork. Cover and refrigerate; use within 4 to 6 weeks.
2. To use the gravy mix: In a saucepan, pour 1 cup cold water. Whisk in 1/2 cup of the gravy mix, bring just to the boil, reduce the heat and simmer for 3 minutes, stirring constantly, or until smooth and thickened. Makes about 1 cup.

Recipe makes approximately 3 cups mix, enough for 6 batches of gravy.

Not understanding what you mean. A beef sauce? What do you put it on top of? Do you mean gravy???

Meat sauce for spaghetti? Here is a good one. Make sure you brown the beef slowly and thoroughly. If it is very lean, add some olive oil to the pan during the browning process. If you are lucky enough to have a crock pot, Instead of (simmer, uncovered for...) just put all in to the crock pot and cook on low for 4 hours.

INGREDIENTS:
1/2 pound lean ground beef
3 to 4 Italian sausages
1 large onion, chopped
1 clove garlic, minced
5 cups marinara sauce or prepared basic spaghetti sauce
1 can (14.5 ounces) diced tomatoes
1 cup water
1 can (6 ounces) tomato paste
1/4 cup minced parsley
1 teaspoon dried leaf basil, crumbled
1 small bay leaf
hot cooked spaghetti
Parmesan cheese

PREPARATION:
In a Dutch oven, cook ground beef, Italian sausage, and onion until meat is browned. Slice sausages and return to Dutch oven. Add garlic and cook for 1 minute longer. Spoon off fat; add the Marinara sauce, tomatoes, water, tomato paste, parsley, basil, and bay leaf.

Simmer, uncovered, for 30 to 45 minutes. Remove bay leaf. Serve with hot cooked spaghetti and pass the Parmesan cheese.
Serves 6.
