I like simple margherita style pizza on thin crust. Just nice tomatoe sauce, mozzerella, and some fresh basil...perfect!

Homemade Pizza
Ingredients
2 3/4 -3 1/4 cups flour
1 pkg. Active dry yeast
1 cup Warm water (120-130 degrees)
2 tbsp. Cooking oil or olive oil
1/4 tsp. Salt
1/2 tbsp. Pizza seasoning or Italian seasoning
1 jar Pizza sauce or spaghetti sauce
2 cups Shredded cheese
Desired toppings

Preparation
Dough:
1. In a large mixing bowl, combine 1 1/4 cups of flour, yeast and salt. Add warm water and oil.
2. Beat with an electric mixer on low speed for 30 seconds, scraping the bowl. Beat on high speed for 3 minutes.
3. Using a wooden spoon, stir in as much of the flour as you can.
4. Turn dough out onto a lightly floured surface. Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic. (6-8 minutes.)
5. Divide dough in half. Cover and let rest for 10 minutes. Use to make pan pizzas or thin crust pizzas.


Pan Pizzas:
1. Grease two 11x7x1 1/2 inch or 9x9x2 inch baking pans. If Desired, sprinkle with cornmeal.
2. With greased fingers, pat dough onto bottoms and halfway up sides of prepared pans. Cover and let rise in a warm place until nearly double. (30-45 min.)
3. For a browner crust, spread olive oil on crust before adding toppings.
4. Add pizza seasoning or Italian Seasoning to dough. Spread pizza sauce or traditional spaghetti sauce onto dough.
5. Add Meats, cheeses, veggies or desired toppings.
6. Bake at 425 degrees for 12-15 minutes or until done.


Thin Crust Pizzas:
1. Grease two 12 inch pizza pans or baking sheets. If desired, sprinkle with cornmeal.
2. Divide dough in half. Spread out onto pans.
3. Do NOT let rise. For a browner crust, lightly spread olive oil on crust befor adding toppings.
4. Add pizza seasoning or Italian Seasoning to dough. Spread pizza sauce or traditional spaghetti sauce onto dough.
5. Add Meats, cheeses, veggies or desired toppings.
6. Bake at 425 degrees for 12-15 minutes or until done.

Here's a recipe that is very good.

Pizza Inside A Pizza

2 cans refrigerated pizza dough
2-3/4 cups shredded mozzarella (divided use)
3/4 cup shredded Monterey Jack
3/4 cup shredded Cheddar
3/4 cup shredded Provolone
2 tablespoons grated Parmesan
2 tablespoons grated Romano
Toppings of your choice (pepperoni, bell peppers, olives, etc.)
1 jar pizza sauce


Instructions
Preheat oven to 475 degrees F.

On a lightly floured surface, unroll first pizza dough. Using a rolling pin dusted with flour, roll dough to 1/4-inch thickness. Place in a well-greased 12-inch perforated pizza pan. Trim dough with a knife or pizza wheel to fit inside the diameter of the pan. Pierce dough with a fork every half-inch to prevent air bubbles. (This will ultimately be your top crust.)

Prebake this crust for 5 minutes; remove crust from pan and place on a wire rack to cool.

Prepare the second crust for the pan in the same way, but remove the excess dough around the edges by rolling a rolling pin over the top of the pan to form a lip on the crust. Pierce with a fork. Combine 3/4 cup mozzarella and remaining cheeses and spread evenly over this crust. Put the partially baked crust on top of the cheese layer.

Spread 1/2 cup of pizza sauce over this top crust, then scatter the toppings of your choice, starting with meats, then vegetables. Finish with the final 2 cups of mozzarella.

Bake for 12 to 15 minutes, or until the cheese is melted and golden brown.

Yield: 8 servings

Goat cheese, mushrooms and olives........

Pizza dough from Traders Joe's, tomatoe sauce, fresh mozzarella, tomatoes, and basil.

Try this unusual topping -
Apricot jelly spread thickly over the base, topped with onion rings (Just a few) and bite-sized pieces of curried chicken (already cooked). Sprinkle a little mozarella. YYYUMMMM!

Fresh tomato, basil and garlic. And of course mozzarella cheese.

Here is a simple recipe I like to use:

1 cup Lukewarm water
1 Packet active dry yeast
3 cups All-purpose flour
1/2 tsp. Salt
2 tablespoons Olive oil

Preparation
In a large bowl, stir together the water and yeast let stand for 5 minutes. Combine the flour ,salt and oil. Stir with a wooden spoon if you prefer until a dough ball starts to form.

Knead the dough for 3 minutes.

This makes two 12-inch round pizza or one 15-10-inch pizza.

Feel free to try different seasonings also. From time to time I will add garlic powder or italian seasoning, whatever you like.

now the pizza sauce is important also. If you have access to fresh tomatoes that would be best. I puree the tomatoes with garlic and basil. salt to taste. cook that over low heat for 15 to 20 minutes then set aside.

Roll out the dough however it is comfortable for you. I have done this for years and still use a rolling pin.

once it is rolled out. Add your sauce and favorite toppings.

now I believe the key to cooking a good pizza is the temperature. Preheat your oven to 500 degrees. If your oven can get hotter go for it.

When you are ready with the pizza put in on the lowest rack in the oven. This will help the bottom of the pizza cook. You have to watch the pizza so stay in the kitchen. After about 8 to 10 minutes take a look at it. If it looks like the crust is cooking well and nothing is burning move it to the middle rack and let the top finish cooking.

Okay now that all went well and the pizza is cooked you not done. Put the pizza on top of the stove. Sprinkle olive oil on it and Itialian seasoning. Cut and serve.

What you need: hotdog buns,cheese(shredded kind) pizza sauce/tomato sauce, and whatever pizza ingredient you prefer(like pepporoni,etc)

Directions: Split your bun in half.Spread on one bun the sauce and then pile on your other ingredients.take the other bun and place it on top like a sandwich. Either place in microwave or stove and let melt.If you put in in stove watch carefully.it shouldnt take long to melt.take out and enjoy.Be carefuly it will be hot...but soooooo good.
