Question:

Cooking Sea Bass ..... can you batter it ?

what is the best way to cook it - with out using the Bar b Q

Any sauce I can make to put over it ... something easy that I would have the stuff in the kitchen,

I have to make this tonight and have never made sea bass - i have made several other kinds of fish. But I am out of Ideas

If you've never had it, sea bass is a VERY oily tasting fish (def not my fav though some folks go nutz for it). I can't see it would take well to batter and frying, both from the texture of the fish and the oil content. I'll broil it with seasonings. If no one has any special recipes you might want to web search it. I'd gladly give you one if I had it, but as I mentioned, I don't enjoy that fish and I love fish. You'll either love it or hate it!

All though you can batter or fry sea bass, I don't recommend it. Sea bass, especially Chilean Sea Bass is delicate in flavor and light in texture and can easily be overwhelmed with other flavors. I'd recommend a simple basting with butter and a squeeze of lemon, plus a little salt and pepper to taste and stop at that! This is great with rice pilaf and fresh green beans.

2 lbs sea bass, filets
lemon juice
flour
salt and pepper, to taste
1/2 cup cooking oil
For the Batter
1 cup flour
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1 cup beer
Slice filets into 2-inch strips. Sprinkle them with lemon juice, then roll in flour (seasoned with salt and pepper).
Prepare batter by combining flour, salt and cayenne pepper, then gradually blending in the beer until all the ingredients are thoroughly mixed.
Heat oil in fish fryer or cast iron Dutch oven. Dip fillets in batter and fry until golden brown. Drain on paper towel to remove excess grease.
Serve with hot sauce or tarter sauce.

I would never batter sea bass.
