A cool, dark and dry place with good air circulation. I wanted to comment on those that said a dark place will keep the eyes on the potatoes from sprouting. It won't. Keep your potatoes in the dark keeps them from "regreening". That is when the potato starts to turn green again. When peeling potatoes that have regreened you peel off the green part also as this will have a bitter taste and containing an alkaloid is moderately poisonous.
