10 litres?!? How about bathing in it?

Seriously, any prebake any pie crust recipe, glaze with apricot jam and then fill with custard.

Apricot Glaze: In a small saucepan heat 1 cup apricot preserves until boiling. Remove from heat and strain to get rid of lumps. Add 2 tablespoons Cognac or water.

Pie Crust:
3 cups all purpose flour
1/2 cup granulated white sugar
1/4 teaspoon salt
1 cup unsalted butter
2 large eggs, lightly beaten

Sift flour and salt together and set aside.

Place the butter in a mixer and beat until softened. Add sugar and beat until light and fluffy. Gradually add the beaten egg, beating just until incorporated. Don't overmix or butter will separate and lighten in color. Add the flour mixture all at once and mix just until it forms a ball. Don't overwork or pastry will be hard when baked.

Roll out dough, put into pan, weigh down with beans or marbles, bake at 400F until light golden brown.

When cool, spread a thin layer of warm apricot glaze over the bottom and sides of the tart to seal the crust and prevent it from getting soggy. Let the glaze dry between 20 - 30 minutes.

Fill with custard, maybe put some fruit on top.

you can buy some pre made pie shells and fill them with the custard, or you can make your own regular size or mini shells:

INDIVIDUAL TART SHELLS

1 c. butter, softened
6 oz. cream cheese
2 c. sifted flour

Blend ingredients well. Chill. Roll small balls and place in small muffin tins. Bake at 350 degrees until golden brown. See [[Cherry Delight[[ for filling or fill with favorite filling.
Makes 4 dozen.
