I've decided to go vegan which means no eggs, no dairy or meat. Does anyone have any yummy recipes???

General Tao's Tofu

Ingredients (use vegan versions):

1 box of firm tofu
egg substitute for 1 egg
3/4 cup cornstarch
vegetable oil for frying
3 chopped green onions
1 Tablespoon minced ginger
1 Tablespoon minced garlic
2/3 cup vegetable stock
2 Tablespoons soy sauce
4 Tablespoons sugar
red pepper to taste
1 Tablespoon sherry (optional)
1 Tablespoon white vinegar
steamed broccoli

Directions:

Drain, dry and cut tofu into 1 inch chunks. You can freeze tofu the night before to get a more chicken-like consistency, but it isn't necessary. Mix the egg replacer as specified on the box and add an additional 3 tablespoons water. Dip tofu in egg replacer/water mixture and coat completely. Sprinkle 3/4 cup cornstarch over tofu and coat completely. Watch out that the cornstarch doesn't clump up at the bottom of the bowl.

Heat oil in pan and fry tofu pieces until golden. Drain oil.

Heat 3 Tablespoons vegetable oil in pan on medium heat. Add green onions, ginger and garlic, cook for about 2 minutes. Be careful not to burn garlic. Add vegetable stock, soy sauce, sugar, red pepper and vinegar. Mix 2 Tablespoons water with 1 Tablespoon cornstarch and pour into mixture stirring well. Add fried tofu and coat evenly.

Serve immediately with steamed broccoli over your choice of rice.

Serves: 4

When my mother used to make tofu (she made her own--nothing like the store-bought stuff), she would make a little sauce for it out of soy sauce, sesame seeds, and crushed red pepper. You put seasoning in the sauce according to your preference.
Right now I am eating a Vegan Stuffed Bell Pepper. You cut bell peppers in half. Steam the bell peppers. You fry up tofu (in place of ground beef for the non-vegan recipe). Add diced tomato, tomato sauce, tomato paste, celery, rice (I used organic long brown rice) and onion (along with anything else you think sounds good in it). Once it has been heated, put it in an oven-safe bowl. Cook it in there until all of the flavors have combined (and everything is good and tender). This is a dish that you can freeze for later (or eat the next day).
Salads are your friend (I don't mean a wimpy salad. I mean a salad with lettuce of many different kinds, tomato, fried tofu, avocado, celery, sunflower seeds...anything else you want to put on it.
Smoothies are good for breakfast. Today I had a smoothie with strawberries, a banana, apple juice, and ice. It was soooo good (very hot day today).
If you google vegan recipes so many come up. There are a lot of vegan cookbooks out there. (Just be sure you check labels. Just because it is vegetarian-friendly does not mean it is vegan friendly. There are several websites that have lists of animal derived products that have big names.)
The key to eating tofu is to not eat it plain. Tofu can be used in soups, salads, or as a main-dish. It can be baked, fried, etc. Tofu is really good in stir fries as a replacement for meat.
You can drink soy milk, almond milk, or coconut milk. Soy milk is good (you might have to get used to the taste). Almond milk you can buy in the stores or make your own. You just take 1 cup of almonds and blend it with 3 cups of water (2 cups if you want thick milk). Strain it, if you like. You can sweeten it with agave, dates, or drink it plain. You can use it in smoothies or baking. (Anything that calls for milk can be substituted.)

Also Get a copy of Fanny Farmer's cookbook.. you'll find some recipes in it. Your library mostly has a copy of it! A most popular pocket size cookbook! I heard the Joy Of Cooking book writer is doing a Vegetarian Vegan cookbook.. when it'll be out is anyone's guess!
