What would u put on a menu?

hi my father is a chef in a nursing home and he needs to make a menu. with 2 recipes he is an excellent chef andwas chosen for it we want something like chicken and brocolli no soup or pork if u can make a menu or give recipes or ideas would be great also if u make a menu if u cnt put it on yahoo answer please email it to me at glamorousgirlx0x@aim.com thnk u so much best and gets 11 points nd stars xD

How about Chicken a la King and Broccoli Rice Casserole? Both are easy to chew and digest, both can be adjusted for low sodium diets, and they are usually crowd pleasers. These recipes are easily multiplied for more servings, too.

Chicken a la King

3 boneless skinless chicken breasts
2 tablespoons butter or margarine
1/2 cup finely chopped onions
1/4 cup fine chopped carrots
1/2 cup frozen peas
1 tablespoon dried parsley
1 (14 1/2 ounce) can chicken broth
2 tablespoons cornstarch
1 dash pepper

Place chicken in microwave-safe container, with just enough water to cover. Microwave on high until done/no longer pink in the center (12-15 minutes, depending on size of breasts). Dice cooked chicken, set aside.

In small saucepan, melt butter. Saute onions and carrots, with parsley, until tender. In separate small bowl, combine cornstarch and 1/2 Celsius of chicken broth, whisk til smooth. Add to saucepan/veggie mix, along with remaining broth.

Bring to a boil, sitrring occasionally, add frozen peas and cooked chicken. Boil for additional 2 minutes.

Serve over toast points.

Broccoli Rice Casserole

2 (10 ounce) packages frozen chopped broccoli
3 cups instant rice
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of chicken soup
1 1/4 cups water
1 (16 ounce) package processed American cheese, cubed
1 tablespoon butter
1 bunch celery, chopped
1 large onion, chopped
salt and pepper to taste


Cook broccoli and rice according to package directions. Preheat oven to 350 degrees.

In a medium saucepan over low heat, mix cream of mushroom soup, cream of chicken soup, and 1 1/4 cups water. Gradually stir in cheese until melted. Be careful that the cheese doesn't burn.

Melt butter in a large skillet over medium-high heat, and saute celery and onion until soft.
In a large mixing bowl, combine broccoli, rice, soup and cheese mixture, celery and onion.

Season with salt and pepper. Pour mixture into a 9x13 inch baking dish.

Bake in the preheated oven for 45 minutes, until bubbly and lightly brown.

Working in a nursing home, wouldn't the recipes have to be for persons with special diets?
And, I'm not clear on the need for menu when you don't mention what recipes he is excellent at?

Low sodium recipes, of course.

As for the veggies, like broccoli, I volunteered in an assisted living dining room years ago and undercooked veggies, the way we like them (with a little crunch) is a no no there.

Your dad must learn to prepare the veggies in a way that cuts down on the gas, which seemed to be killer painful to these old guys. Overcooked is one way.

Beef roast with potatoes,carrots,and onions!Slow cook a beef roast, boil some potatoes,carrots,and onions in the same pot.As the roast is cooking,tell your dad to add some Golden Mushroom soup in with the roast, and a little bit of cornstarch.This will make the most delicious gravy to cover the boiled potatoes,and carrots!
