TORTILLA CHEESE WRAP-UPS

1/4 c. soft cream cheese
1 tbsp. chopped chives
1/2 tsp. Mexican seasoning
4 flour tortillas (6 inch)
8 slices cheese
Salsa

Mix cream cheese and chives and seasoning until well blended. Spread 1 tablespoon cheese mixture over tortilla. Place 2 cheese slices on each tortilla. Tightly roll up. Wrap securely in plastic wrap. Refrigerate. Cut each tortilla into sixths. Secure ends with wooden pick. Serve with salsa. Makes 2 dozen.

Chicken pizza
1 1/2 cups all-purpose flour
1 tablespoon sugar
1 1/4 teaspoons active dry yeast
1/4 teaspoon coarse salt (kosher or sea salt)
3/4 cup warm water
1 tablespoon olive oil
1/3 cup yellow cornmeal
Additional cornmeal
2 cups Mexican cheese blend (8 oz)
1 1/2 cups shredded cooked chicken
1 can (14.5 oz) Muir Glen? organic fire roasted diced tomatoes or plain diced tomatoes, drained
1/2 medium yellow bell pepper, chopped (1/2 cup)
1/4 cup sliced green onions (4 medium)
1/4 cup chopped fresh cilantro

Heat oven to 450°F.
In medium bowl, stir together 3/4 cup of the flour, the sugar, yeast and salt. Stir in warm water and oil. Beat with electric mixer on low speed 30 seconds. Beat on high speed 1 minute. Stir in 1/3 cup cornmeal and remaining 3/4 cup flour to make a soft dough. On lightly floured surface, knead dough until smooth and elastic, about 5 minutes. Cover and let rest 10 minutes.

Spray large cookie sheet with cooking spray; sprinkle with additional cornmeal. Press dough into 14x10-inch rectangle on cookie sheet; prick with fork. Bake 8 to 10 minutes or until edges just begin to turn brown. Sprinkle with 1 cup of the cheese blend. Top with chicken, tomatoes and bell pepper. Sprinkle with remaining 1 cup cheese. Bake 6 to 8 minutes longer or until cheese is melted and edges are golden brown. Sprinkle with green onions and cilantro.

Time-Saver: You can choose to cook your own chicken, or purchase a rotisserie chicken and shred the meat for this pizza.

Makes 6 servings.

HAMBURGER CORN PIE

1 pound ground beef, lean
1/4 pound bulk sausage
1 small onion, chopped
1 clove garlic, finely chopped

24 black olives
2 teaspoons chili powder, or to taste
1 1/2 teaspoons salt
1 cup cornmeal
1 cup milk
2 eggs, well beaten
4 ounces shredded cheddar cheese

Cook and stir hamburger, pork sausage, onion and garlic until meat is brown; drain. Stir in tomatoes (with liquid), corn, olives, chili powder and salt. Heat to boiling. Pour into ungreased baking dish, 9 x 9 x 2 or 12 x 7-1/2 x 2-inches, or 2 quart casserole.
Mix cornmeal, milk and eggs; pour over meat mixture. Sprinkle with cheese. Cook in 350 F. oven until golden brown, 40 to 50 minutes.

Garnish with parsley sprigs and black olives if desired.

Why dont you ask him what he would like for dinner? Then maybe that way you can decide and make something he enjoys eating!

Try Nacho Chicken, super easy and yummy
coat chicken with cream of chicken soup and crumbled nacho cheese dorito chips. Pour 1 Tblspoon melted butter over top Bake for about 30-45 min at 350 (or untill chicken is throughly cooked!

My husbands the same way.
Eventually his palet will mature. I make what I like, I take alot of pride in my cooking and seems like such a waste to be married to someone who eats like a 5 year old.

One thing that might help you is to find out what he wants before you so your grocery shopping. Make a menu for the week, then a list of what you need. Now everyday you can chose easily.
