SNICKERDOODLES

2 eggs
2/3 cup oil
2 tsp. vanilla
3/4 cup sugar
2 cups flour, sifted
2 t. baking powder
1/2 tsp. salt
1 tsp cinnamon or 2 tsp grated lemon rind
1/2 cup sugar

Heat oven to 400.
Beat eggs with fork, stir in oil, vanilla and lemon rind (if using). Blend in 3/4 cup sugar until mixture thickens.

Blend flour, baking powder, and salt; add to mixture.

Roll into 1 inch balls. Mix 1/2 cup sugar and cinnamon. Roll balls in sugar mixture.

Place on baking sheet, criss cross with fork. Place 2 inches apart on ungreased baking sheet.

Bake 8-10 minutes. Remove immediately from baking sheet.

Variations: You may omit cinnamon and use 2 tsp lemon rind in batter, roll in sugar and bake.

PREPARATION:

Bake snickerdoodles at 400° for 6 minutes or until lightly browned. Remove to wire racks to cool. Makes about 4 dozen snickerdoodles.

Cream the first four ingredients.
In a separate bowl, mix flour, cream of tartar, soda, and salt.
Add to creamed mixture.
Mix cinnamon and sugar in a small bowl.
Shape dough into balls and roll in the cinnamon-sugar mixture.
Bake at 400°F for 8-10 minutes.

Mix your eggs, shortening, and sugar together until slightly lumpy.

Mix the rest of the ingredients together in separate bowl. Mix the dry mixture with the wet one. Wrap the dough and place in the refrigerator for about an hour.

Preheat the oven to 350 degrees.

Remove the dough and roll into balls depending on what size you want.

Sprinkle the cookies with cinnamon sugar and set on a cookie sheet. Put the cookies in and set the timer for 8 minutes.

Watch the first batch and increase/reduce cooking time if needed.

2 c. flour

1 tsp. baking soda
1 tsp. cinnamon
1 1/2 c. oatmeal
Cinnamon and sugar

In large mixing bowl, beat butter until creamy. Add sugar, mix well until lightly and fluffy. Add eggs, mix well. Stir together flour, salt, soda and cinnamon. Add sifted dry ingredients to creamed mixture; mix until well combined. Stir in oatmeal.
Form dough into 1 inch balls. Roll into cinnamon and sugar. Place on greased cookie sheet. Press down with fork. Place 1 inch apart. Bake at 400 degrees for 8 to 10 minutes. Cool and place in tightly covered container. Makes 4 1/2 to 5 dozen cookies.

1/2 c. butter 1/4 t. baking soda
1 1/2 c. flour 1/4 t. cream of tartar
1 c. sugar 2 T sugar
1 egg 1 t. cinnamon (I like lots)
1/2 t. vanilla

In mixing bowl, beat butter, add 1/2 flour, 1 c. sugar, egg, vanilla, baking soda and tartar. Beat thoroughly then beat in remaining flour.

Shape into balls adn roll in cinnamon/sugar mix. Place 2" : apart on ungreased sheet. I flatten them with a glass dipped in sugar. Bake 375 degrees 10-11 minutes.
