For the Enchiladas, lightly grease a 9x13-inch Pyrex dish, and preheat your oven to 400°F degrees.

grate the cheese, and set aside.

Heat the oil in a second skillet. Have the corn tortillas ready.

Putting the enchiladas together is just a series of steps . And if you're the kind of cook that freaks out when the kitchen gets a little messy, you might want to consider finding a good Tex-Mex restaurant instead.
Make sure you wear a old t-shirt or apron just incase because the sauce does stain.....

1 cup milk
1/4 cup flour
1-4 TBSP Water or Milk

cook some pasta, melt some butter or put a small amount of oil (olive oil is best) in a pan with some herbs. stir in the pasta. its so nice!

Crock Pot Beef Stroganoff.
1 - 2 lbs of lean stew meat
1 can of Campbells golden mushroom soup


Put these 2 together, add salt & pepper to taste. Cook in crock pot for 8 hours Some people put a bit of cream cheese after 7 hours, I don't-it's too rich.Serve over egg noodles or rice. Delicoius every time!

soup. veggies, water, some salt & pepper, and voila!

Fry together courgettes, peppers, mushroom and cherry tomatoes (last), add to cooked pasta, then add grated cheese!!!!

or....

Mince.....Ragu....pasta!!! Voila....Spag Boll!!

Try a cup of boiled water! Not only is water healthy, it comes from the tap so it is pretty cheap too!

1. Whole chicken (on my grill's rotisserie)

Takes about 1-2 hours depending.

If you really want to cook, I guess bread soup. Water, bread, bread. Can't get simpler than that, but with the right herbs and flavours can be quite nice. Or just keep it simple.

If cooking is not a must, lettuce, with oil, salt and vinegar dressing, slice of bread. Carrot and tomatoes.
Bruschetta: tosted bread, salt, rub a garlic clove on the bread, oil. Tomato (fresh) optional.

Rosemary Grilled Chicken

Rub chicken breast with fresh chopped rosemary, chopped garlic, olive oil, salt an pepper and grill! Totally herbaceous!

we call it crows nest

1 -2lbs hamburger (ground and salt and pepper, maybe a little garlic powder and onion powder)

2 cans corn drained or 1 can drained corn and 1 can cream corn

4-6 potatoes (made like mashed potatoes)

layer hamburger, then corn (if using one can of each mix them together first) the the mashed potatoes on top. add a little melted butter and bake at 375 until golden.

my family also like Mexican lasagna....

1 lb hamburger
1 pack taco seasoning
1 can re-fried beans
1-2 lbs cheese
2 cans enchilada sauce
1 can olives
sour cream
1 pack corn tortillas

ground up hamburger, drain add taco seasoning and re-fried beans mix and set aside.

cut tortillas in to strips (all of them)

in a baking dish layer tortillas, hamburger mixture, cheese, olives and enchilada sauce until all ingredients are used top layer should be tortilla's, enchilada sauce and the cheese cover and bake at 375 for 30 minutes uncover and bake and additional 15 minutes.

Both of these dishes are cheap and easy and very filling and are great reheated.

mashed potatoes! my favorite food, and so easy, although also easy to make fancier by adding spices and garlic, and butter, and cream... but even that's pretty simple. it's amazing the ammount of variety you can get with mashed potatoes.

It might sound disgusting to any of you's..... but i love rice and gravy....?

Rice balls! All you need is Japanese sticky rice.
Maybe add some furikake (sprinkly bits) or pickled plums or sesame seeds or nori (seaweed).
But basically it's just rice that you squish into a ball-shape known as nigiri (which means the action of squishing into a ball-shape. NB not literal translation)

Pasta, Basil Pesto, Toasted pine nuts and parmesan cheese........

with a nice chilled glass of dry white wine.

As it is currently in Season (UK)

Steamed Asparagus and Hollandaise sauce

Asparagus, Butter, Eggs, Lemon Juice, Vinegar and seasoning

You can add a poached egg to if you are really hungry.
