What's the difference between fruit concentrate and fruit extract?


Answers:
Fruit concentrate is the pulp of a fruit that has had some percentage of the natural water removed. For example, fresh orange juice is maybe 11% sugar. By removing water to 60% sugar, the material is cheaper to transport and it is more stable to store.

Fruit extract is a flavoring made by treating the fruit with steam or alcohol or other method to remove the essence or taste of the fruit. There is no sugar or pulp or anything, just the flavor and sometimes some color.

Fruit concentrate is taking the natural flavors of juice fruits are boing it to get rid of water to make it stonger. Fruit extract is as is. It is taken out directly and nothing is done to it except pastuerization.

Concentrate is water mixed with a syrep, extract is from the fruit.
