TOAD IN THE HOLE
1 lb pork sausage links
1 cup milk
2 eggs, well beaten (room temp)
1/2 cup shredded cheddar cheese
1/4 cup minced onions
1 cup flour
1.Preheat oven to 400 degrees F.
2.Place sausages in an 8x8 square pan or baking dish.
3.Bake 20 minutes.
4.Combine other ingredients and beat well.
5.Remove sausages from oven and pour off all but 2 tablespoons drippings.
6.Arrange links around pan and pour batter over them.
7.Bake 30 minutes longer or until batter has risen to top of the pan and is golden.
8.Cut into squares and serve immediately with Dijon mustard.
Shepherd's Pie
1 1/2 lbs ground beef
8 ounces button mushrooms, sliced
1 medium onion, chopped
2 cloves garlic, chopped
16 ounces frozen green peas
8 cups mashed potatoes
12 ounces cheddar cheese, shredded
salt and pepper
Worcestershire sauce, to taste
nutmeg
butter
1.Brown ground beef with 1/2 chopped onion& 1 clove chopped garlic.
2.Season to taste with salt, pepper& worcestershire sauce.
3.Spread into 9 x 13 baking dish.
4.Saute remaining chopped onion, 1 clove chopped garlic in a little butter- add sliced mushrooms and cook until soft.
5.Layer on top of ground beef.
6.Sprinkle frozen peas onto mushrooms.
7.Spread on mashed potatoes next.
8.Smooth completely to edges to seal like a crust.
9.Lightly sprinkle potatoes with ground nutmeg.
10.Top evenly with shredded cheese.
11.Bake at 350 degrees for 30 minutes or until cheese starts to golden and contents are bubbling.
12.Allow to cool 5 minutes before serving.
REAL ENGLISH SHEPHERDS PIE!
1 onion, diced
1 tablespoon olive oil
1 lb. lamb, minced
1 clove garlic, crushed
1 large carrot, diced
1 beef stock cube
1 lb. chopped tomatoes
1 tablespoon corn flour
3 tablespoons tomato puree
pinch of salt and pepper
2 lb. potatoes
1 stick butter
This is how to make a real English shepherds pie, made with lamb. If made with beef, it would be known as cottage pie.
Firstly, heat the olive oil in a pan, add the onion, garlic and carrot and cook until soft. Add minced lamb and stock cube, then cook until the mince is brown and shows a crumbly texture. Stir in the tomatoes and tomato puree, and add the corn flour. Leave to simmer, stirring occasionally, for about fifteen minutes, or until thickened.
Meanwhile, peel and chop potatoes and boil until soft, then mash them with the butter and salt and pepper to taste.
Put the filling into a deep dish, then top with the mashed potatoes and put under a warm grill (broiler) until the top is brown and crisp.
Delicious topped with melted cheese. Enjoy!

1 lb. ground beef
1 can peas
1 can sweet corn
1 medium onion, diced
1/3 c. sugar
8 medium potatoes
2 c. shredded sharp cheddar cheese
Boil potatoes, mash and season to taste with milk and butter.
Brown ground beef and onion with salt and pepper. When cooked, add peas, corn, sugar. Let simmer until heated through.
In 13x9 pan place meat and vegetable mixture in bottom of pan. Cover with mashed potatoes and sprinkle cheese on top.
Place in oven on BROIL until cheese is bubbly or light brown.

(Put cores of potato removed in with the rest of the casserole.) Parboil pork sausages (which have been pierced to let out steam) just a minute and insert into the holes in the potatoes. (I sometimes got three in big ones.) Lay into a casserole or electric roaster so pork sausages don't fall out. Cover with 1 can mushroom soup mixed with a cup or 2 of the liquor from parboiling. Bake at medium, 350 degrees for 1 hour

Simple Shepherd's Pie
1# hamburger
chopped onion (optional)
cream of celery
1/4 c. milk
1/2 stick melted butter
16 oz. bag of mixed vegetables
3-4 medium potatoes, peeled and quartered
1 beaten egg
milk for mashed potatoes
(could use instant potaotoes)
Cheddar cheese
Cook hamburger and onion till meat is browned and onion is tender; drain off grease.
Stir in vegetables, soup, 1/4 c. milk, melted butter and season with salt and pepper.
Place mixture in a pan.
Cook potatoes in salted boiling water about 20 min or until tender; drain. mash while hot; stir in egg. Add enough milk to make potatoes fluffy, yet stiff enough to hold their shape. Season with salt and pepper.
Spread potatoes on top of meat mixture. Sprinkle with cheese.
Bake, uncovered, in a 350 degree oven for 30-40 minutes.
makes 4-6 servings
If you want to shorten the recipe to about 25-30 minutes, then cook your mixed vegetables and then add to hamburger mixture.
Edit: You can substitute cream of mushroom for the cream of celery. But the cream of celery compliments the mixed vegetables.

For the Batter:
115g/4oz plain flour
large pinch of salt
freshly ground black pepper
4 large eggs
300ml/? pint milk
2 tbsp/30g fresh thyme leaves
8 good quality pork, beef or vegetarian sausages
2 tbsp/30g of beef dripping or white vegetable fat
2 tbsp/30g Dijon mustard
Method
1. To make the batter, sift the flour into a large bowl. Add the salt and pepper.
2. Make a well in the centre and break in the eggs. Using a wooden spoon gradually beat the eggs into the flour then slowly beat in the milk until the batter is the consistency of double cream.
3. Strain and push any remaining lumps through a sieve. Stir in the thyme. Cover and leave to stand for 30 minutes, or ideally 3-4 hours.
4. Preheat the oven to 200C/400F/Gas 6.
5. Heat a large non-stick pan and cook the sausages over a medium heat until golden brown all over. If you do not have a non-stick pan add a little oil. Turn off the heat and brush the sausages with the mustard. Set aside.
6. Place the dripping or white vegetable fat into an ovenproof dish and pop in the oven for 5 minutes or until the dripping is hot and hazy.
7. Add the sausages to the hot dish and pour in the batter. Immediately return the dish to the oven and cook in the oven for 35-40 minutes until well-risen and golden brown.
8. Serve a portion of the toad in the hole with baked beans, if you like them, seasoned with black pepper and a large knob of butter.

1kg/2lb 3oz mutton, minced
30ml/1fl oz beef stock
1 lamb stock cube
1 tsp chopped fresh thyme
1 tsp fresh parsley
500g/1lb 1?oz potatoes, boiled
salt and freshly ground black pepper
100ml/3?fl oz milk
Method
1. Preheat the oven to 220C/425F/Gas 7.
2. Place one tablespoon of the oil into a frying pan over a medium heat and fry the onions until softened and beginning to turn golden-brown. Remove them from the pan and set aside.
3. Add the carrots and celery and fry until softened and starting to turn golden-brown. Remove and set aside with the onions.
4. Heat the remaining tablespoon of oil and 50g/2oz of the butter and allow the butter to foam. Add the minced mutton, stirring it until it browns.
5. Add the carrots and celery and stir well.
6. Add the beef stock and crumble in the stock cube. Stir well to combine.
7. Add the thyme and parsley and stir to combine.
8. Mash the potatoes with the remaining butter in a clean bowl. Season with salt and freshly ground black pepper and add the fried onions.
9. Transfer the meat into an ovenproof dish. Spread it out to make an even layer. Spoon over the mashed potato and tease the surface with a fork to create some peaks.
10. Place the dish into the oven and bake for 30 minutes, or until the topping is golden-brown and crisp. Serve at the table in the dish.
