Of course, get a good market cut brisket, score the meat on both sides with a knife, then dry rub with brown sugar, kosher salt and cayenne pepper. Use a hickory or pecan smoke--preferably pecan since its a milder flavor. You could use oak if they have one for a Bradley--great smoking flavor and wood. Smoke it at about 180 to 190 degrees for 8 to 10 hours. And that, my friend, IS great Texas Smoking and you can do it on a Bradley with those odd little smoking tablets--but it works well. I have a SmokinTex, but then again, I do my smokin' in the heart of Houston, TX, but yours should just as good if you follow the above. Enjoy
