Does any1 know a good guacamole recipe?

also i have a question about avacados...what shade of green are they supposed to be when you buy them and are they supposed to have fuzz on some of it? I think I bought a rotten one.

No .....no fuzz!!!!!!!! they should be a nice deep green color, some have smooth skin, some have bumpy skin.....but definitely NO fuzz!!!!!!

Salsa:

1 can (14.5 oz) Muir Glen? organic fire roasted or plain diced tomatoes, well drained
1/4 cup chopped onion
2 tablespoons chopped fresh cilantro
1/4 teaspoon coarse salt (kosher or sea salt)
1 clove garlic, finely chopped
1 small fresh jalape?o chile, seeded, finely chopped

Guacamole:

3 ripe large avocados (about 1 1/2 lb) pitted, peeled
2 tablespoons fresh lime juice
1/2 teaspoon coarse salt (kosher or sea salt)
1/2 teaspoon red pepper sauce
1 clove garlic, finely chopped

In medium bowl, stir together salsa ingredients.
In another medium bowl, place avocados; coarsely mash. Stir in remaining guacamole ingredients. Spoon guacamole into shallow serving bowl; top with salsa.

Serve with tortilla chips as desired.

Makes 12 servings (1/4 cup each).

Tip: Look for avocados that are firm, but yield to gentle pressure. If they are not quite ripe, place avocados in a paper bag, and let ripen at room temperature.

GUACAMOLE

Avocado Salad:

1 ripe tomato, peeled
2 avocados
1/2 onion, minced
1 tablespoon vinegar
1 chopped green chile, or to taste
salt and pepper to taste

Mash together the tomato and avocados. Stir in remaining ingredients.
Serve with warm tortillas.

Optional: Mix in pomegranate seeds for added color and a unique but authentic variation.

4 Avocados
Juice from 1 lime
? teaspoon garlic powder
? teaspoon salt
2 tomatoes, seeded and diced
1 tablespoons cilantro, finely chopped

Cut the avocados in half, remove seeds, and scoop flesh into bowl. Add lime juice, salt, and garlic powder. Mash with potato masher until mostly smooth. Stir-in tomatoes, onion, and cilantro.

guacamole is really very simple to make , but gets complex when choosing the heat desired, basic recipe are, onion,garlic,tomato,cilantro,s... and most imprtant is LIME-JUICE.. as far as peppers it's your choice of jalapeno ( most popular !) or the serrano which has a very simular taste but somewhat milder ! if you want a burning but pleasant heat then go w/the habanero ! anway all ingridients finely chopped and the avocado's smashed not mashed leave some texture in the mix .AS FAR AS CHOOSING BY COLOR
THE AVOCADO SHOULD BE FIRM AND GIVE A LITTLE WHEN SQUEEZED -COLORS VARY DEPENDING ON THE TYPE OF FRUIT SOLD IN YOUR AREA ! DON'T FORGET TO SEASON WITH SALT --ONLY-NO PEPPER !!

I'M TELLIN U THIS IS THE ABSOLUTE BEST!!!(for me)...the simpler, the better tasting...Avocado should give to the touch. Be a little soft. Maybe kinda dark green....I take 1 ripe avocado, juice of half a lime, a couple dashes of texas pete or tabasco, 1/4 teaspoon garlic powder, salt and pepper to take. more salt than pepper. Half the avocado and take out seed. Scoop out flesh with a big ol spoon and put into a bowl. Add lime juice, texas pete, garlic, and s&p. Mix til u get the consistancy you want. YUMMY YUMMY YUMMY. Try it I dare ya:-)

Try this Caribbean take on Guacamole. Avocados grow abundantly on our islands. Season the guacamole to suit your own taste but citrus juice is a must. It keeps the avocado from discolouring.

2 large avocados
2-3 tbsp.lemon or lime juice
1/2 tsp. tabasco or pepper sauce
2 tbsp. minced onion
1 clove garlic, minced
1 tomato chopped fine (optional)
salt to taste
tomato wedges for garnishing

Cut avocados in half and scoop out pulp with a spoon. Mash pulp coarsely with a fork while blending in lemon or lime juice.
Add other ingredients to mixture and taste (check for salt)
Garnish with tomato wedges. Serve as a dip with crackers, chips etc or make a sandwich.
Seems like the avocado you bought was indeed bad. On the islands we get various shades of green but they should be firm to the touch and not too hard when they are ready to be used.
