I eat baked chicken all the time but I want something good to do with it once in a while. thanks!

Chicken and Mushroom Bake with Rice
6 chicken pieces
1 c. water
1 can cream of mushroom or
cream of celery soup (i prefer cream of mushroom)
1/2 c. rice
2 medium carrots, sliced (I sometimes omit)
celery salt, for seasoning
paprika, for seasoning
1/4 tsp. salt, as needed
Place rice in bottom of a baking dish. Pour 1/2 c. water over rice. Add 1/2 can mushroom soup. Stir to mix with rice. Place chicken legs, salted and peppered, on top of rice mix. Sprinkle with celery salt. Add carrots. Add remaining 1/2 c. water to mushroom soup in can. Stir until well blended. Pour over chicken, carrots and rice. Sprinkle paprika on top, sometimes I add a little parsley (nice pretty effect). Cover tightly with foil. Bake at 325' for 1 hour.
You can also cook this without the rice and carrots.
It makes a nice gravy to pour over cooked rice or noodles.

This is quick and easy. A family favorite.
Saturday Chicken
5 servings
10 chicken pieces
(you dont have to use that many chicken pieces. Use how many pieces you want. the rest of the recipe stays the same.)
1 can condensed cream of mushroom (or cream of chicken)
1 cup of cream (dont cheat and use milk; the cream makes a lot of difference)
salt, garlic powder, and paprika- to taste
chopped parsley
Season chicken with salt, garlic, and paprika. Next, spread it out, in one layer baking pan. Dilute the soup with the cream; pour it over the chicken, and sprinkle parsley on top.
Bake , uncovered, at 350' for 1 hour or until juices run clear when chicken is pierced with fork.
Makes a delicious gravy. Serve with mashed potatoes or buttered noodles or rice.

This recipe is simple and delicious, my kinda of recipe.
The original recipe called for mayonnaise but I didnt have any on hand so I substituted ranch dressing. I thought for sure that i ruined it but it was awesome and my family loved it.
I have also used chicken legs, i just added more water and cooked a little longer.
Classic Herbed Chicken
1- envelope Lipton Recipe Secrets Savory Herb with Garlic Soup Mix
4 Tbsp water
1/3 c. of Ranch Dressing
4-5 boneless chicken breast
1. Preheat oven to 425 degrees, In small bowl, blend Savory Herb with Garlic Soup Mix, ranch dressing and water.
2. In baking pan sprayed with nonstick spray, arrange chicken; pour 1/2 of soup mixture over chicken.
3. Bake uncovered, turning once and pour remaining soup mixture over chicken, 25 minutes or until chicken is no longer pink.

Broccoli Chicken Casserole
2 boiled chicken breasts, diced into small chunks
(just boil the chicken for at least 10-15 minutes or until no longer pink) (you can also used dark meat)
Cool and then cut into chunks
1 pkg broccoli
1 can of cream of chicken
Pepperidge Farm Stuffing
1/2 c. mayonnaise
1 1/2 tsp. lemon juice
4 oz pkg mild cheddar cheese
Boiled the broccoli for 5 minutes, then drain. I was too afraid to put uncooked broccoli in the casserole, (thought i would ruin it).
Combine soup, mayonnaise, and lemon juice. Mix with broccoli and diced chicken. Sprinkle with cheese and stuffing mix. Bake at 350' for 35 minutes :0}

Chicken Broccoli Casserole
3c. cooked rice (i use success)
1 tbsp. butter or margarine
1 can of cream of chicken
1 soup can of milk
1/2 c. chopped onion (recipe calls for 1 cup)
1/2 c. chopped celery (recipe calls for 1 cup)
3 c. chicken, chopped (i prefer the white meat)
1 pkg frozen broccoli, cooked
8 oz Cheez Whiz (some times i add more)
the cheesier the better
Saute onions and celery in butter until clear.
Add chicken soup and milk.
Add cheez whiz and heat slowly until blended.
Mix in broccoli, rice and chicken.
Season to taste. Pour into casserole dish, and
bake at 350' for 30 minutes.
(casserole may be frozen after baking)
(sometimes i substitute mixed vegetables or green beans)

BAKED SALSA CHICKEN

1 small chicken cut up, bone-in, skin removed
1 jar (any kind) salsa (Newman's pineapple is a good)

Preheat oven to 350.
Newman's Pineapple Salsa is a good choice for this recipe.

Arrange cut-up chicken in a baking dish. Pour salsa over the chicken to cover, as much as you want. Cover with foil.

Bake for about 1 hour, removing foil during the last 10 minutes.


SESAME BAKED CHICKEN

1 tablespoon lemon juice
1 tablespoon Gravy Master
2 tablespoons vegetable oil
1/3 teaspoon poultry seasoning
Salt and pepper to taste
1/3 cup sesame seeds
1 (2 1/2 to 3 pound) frying chicken, cut up

Arrange chicken pieces in baking pan in single layer. Combine lemon juice, Gravy Master, oil and poultry seasoning. Brush over chicken pieces. Sprinkle with salt and pepper and sesame seeds. Cover and bake at 400 [degree symbol] F. for one hour. Uncover and bake 15 to 20 minutes longer. Makes 4 servings.

BAKED CHICKEN WITH POTATOES AND ONIONS

1 fryer, cut up
4 potatoes, quartered
4 lg. onion sliced
Lg. can Italian tomatoes
Olive oil
Oregano
Parsley
Garlic
Salt and pepper

Cover bottom of pan with oil, add chicken, potatoes, onions. Cover with tomatoes and season. Drizzle with oil. Bake at 350 degrees for about 1 hour or until tender. Broil last 5 minutes on each side of chicken to brown.

I LOVE BACKED CHICKEN WITHOUT THE SKIN DABBED WITH BUTTER AND LEMON PEPPER SPICE, AND BAKED (WRAPPED IN FOIL FOR 22 MINUETS YUMMY!EASY TO MAKE & CLEAN UP!

I make this all the time in a baking sheek at least one inch thick (to hold in juices) place a bed of onions and cut up some potatoes sprinkle salt and pepper and oil, grab the chicken season it place on top of chicken also drizzle with oive oit and bake for 45 to 60 minutes at 350 degrees, you can serve with rice , or salad

I have a good Chicken and Rice recipe.

In the bottom of a greased 9 x 13 pan layer the following in this order:

1 1/2 cups rice (I use minute)
1 1/2 cups water
chicken (use as much or as little and the pieces you desire)
heat together 2 cans cream of mushroom soup and 1 cup milk and pour that over the chicken.
sprinkle 1 packet dry onion soup mix over that
Cover with foil and bake at 350 degrees for 2-3 hours.

Enjoy! This is very delicious.

This is really easy and I love it when my dad makes it. all you do is make an egg wash ( just beat some eggs in a bowl) and then you get italian bread crums and put them in a seperate bowl. dip both sides of the chicken in the egg and then cover it with bread crums and bake! you can repeat the steps if you like a lot of breading. its really good though. mashed or baked potatoes and greanbeans go good with it too! = )

one chicken (cut or whole) or equivalent pieces of your favorite piece
Lemon and or lime juice (from a bottle is fine)
salt
pepper
garlic (chopped minced or powder)
Italian seasoning (oregano thyme basil roesmary)
olive oil
Aluminum foil

preheat oven to 350
cover cookie sheet with foil (make sure you have enough to make it into a packet)
rub the chicken with the oil
sprinkle with salt, pepper, garlic and Italian seasoning (to taste)
Lay the chicken on the foil covered sheet (if in pieces keep them close together)
add about 1 tablespoon of lemon juice before you seal it into a packet
put in oven for 45 minutes to an hour (depending on the sizes of the pieces you may want to check after about 35 minutes or wait even the full hour before you check it)
serve with your favorite sides
