BASIC VEGETABLE STOCK

3 med. carrots, chopped
3 stalks celery, chopped
2 med. onions, chopped
2 cloves garlic, minced
1 med. potato, diced
1 bell pepper, diced (optional)
12 c. water
Pepper to taste
Herbs to taste

Combine all ingredients in large soup pot and cover with water. Bring to a boil. Reduce heat, cover and simmer until vegetables are tender (about 1 hour). Remove from heat. Cool and strain. Use liquid as base for vegetable soup or for recipes calling for broth or stock.

I wouldn't use any potato in my veg stock, it would make it cloudy and starchy, which is kinda gross for a stock

I cut up any variety of vegetables in one inch pieces (I use
celery, onions,carrots and shallots - about three of each -
stalks on celery), add two cups of water, simmer on low for two hours, stirring occasionally. Cool slightly, strain - taste
for seasonings, then add salt, pepper, and favorite herbs
to strained liquid. Simmer for 30 minutes more, and enjoy.

1/2 a stick of celery chopped roughly
1/2 a med carrot chopped roughly
1 onion cut in half, loose skin taken off
1 only, bay leaf
stalks of 3 shallots
1 piece of garlic whole skinned and squashed
salt n pepper to taste
4 cups of cold water
Fry it all off in a sauce pan till light in colour,
add water, stir, bring to the boil and simmer till
half reduced. Strain the stock and pour the liquid
back in the pot to reduce till you have one cup.
To make it a stronger stock, replace salt with
celery salt.
