I find myself with a lot of rhubard on hand, of late. Has anyone tried putting rhubarb in strawberry flavored jello?

Yes, it can be done -- and here are some recipes for you --

Rhubarb Dessert

4 cups rhubarb
1 cup sugar
1 (3 oz.) box strawberry Jell-O
1 cup water
1 yellow or white cake mix

Put 4 cups rhubarb on the bottom of a 9 x 13 inch dish. Sprinkle with 1 cup sugar. Next, sprinkle with 1 box strawberry Jell-O. On the top, sprinkle 1 yellow or white cake mix. Over this pour 1 cup of water. Bake 45 minutes at 350 degrees. Delicious served with whipped cream or ice cream.

30 Min. Strawberry Rhubarb Marmalade

5 cups sliced rhubarb
3 cups sugar
1 cup crushed pineapple, drained
1 package strawberry Jell-O gelatin dessert

Mix rhubarb, pineapple and sugar in a large pan.
Let stand 30 minutes.
Bring to a boil. Reduce heat to a simmer. Stir and cook for 15 minutes. Add one small package of strawberry Jell-O.
Stir well.
Pour into hot sterilized jars and seal.
Or pour in clean sterilized jars, seal and refrigerate.
Or cool completely.
Pour in 1 quart zip lock bags and freeze.

Rhubarb Swirl Salad

3 cups rhubarb, chopped
3/4 cup sugar
1 tbsp. butter
1 (3 oz) pkg. strawberry Jell-O
1 (3 oz.) pkg. instant vanilla pudding
1-1/2 cups milk
1 (4 oz.) carton Cool Whip (lite)
1/4 tsp. vanilla

Cook rhubarb, sugar and butter for 10 minutes. Add strawberry Jell-O. Mix well and let cool. Mix pudding and milk until thickened. Add Cool Whip and vanilla. Put in a large bowl with cooled mixture and swirl. Chill well. Can be used as a dessert on a graham cracker crust.

Try these:

RHUBARB JELLO SURPRISE

1 lg. pkg. strawberry Jello
2 c. boiling water, approximately
1 sm. can crushed pineapple
1 c. rhubarb, diced
1 c. fresh strawberries (optional)
Whipped cream

Cook rhubarb and pineapple together until rhubarb is done. Add enough boiling water to makes 2 cups of mixture. Add to Jello and stir to dissolve. Cool and add strawberries if desired. Chill. Serve with whipped cream.

RHUBARB JELLO JELLY

5 c. rhubarb
4-5 c. sugar
1 (6 oz.) pkg. Jello, any flavor (raspberry's good)
1 can crushed pineapple, med. size

Let rhubarb and sugar stand 30 minutes. Add slightly drained pineapple. Cook 25 minutes or until rhubarb is tender. Take from heat and add the Jello; mix well. Add red food color, if desired. Put in glasses and seal.

Two people have already given you really great recipes. What I would say is make sure you have the right texture for the rhubarb. My aunt tried this once and the rhubarb was mushy and it made the whole thing disgusting.
