I love my raw and fresh, with a squeeze of fresh lemon. If they are cold on ice, it's even better. Oooo.......food heaven!

with a wasabi mirin dressing and some trout pearls
or red wine vinegar dressing with finely chopped shallot
or steamed with fresh ginger and lime juice
