Answers:
8 manicotti, uncooked
1 (30 ounce) jar spaghetti sauce
1 lb ground beef
2 eggs
1 cup mozzarella cheese
1 (15 ounce) container ricotta cheese
1/4 cup parmesan cheese
1 teaspoon italian seasoning
1/2 teaspoon garlic powder
1/8 teaspoon salt
1/4 teaspoon pepper
1 cup mozzarella cheese

Preaheat oven to 350 degrees.
Bring 4 quarts of water to a boil; add salt if desired. Place noodles in water and boil for 9 minutes. Drain and rinse in cold water to prevent sticking.
While noodles are boiling, brown meat in a large skillet. Drain and add spaghetti sauce; set simmer for 5 minutes, then turn off heat.
In a bowl, combine eggs, 1 cup mozzarella, half of the ricotta, parmesan and seasonings.
Pour a layer of meat sauce in the bottom of a baking dish, using half of what you have.
Using a spoon or piping bag, fill the noodles with the cheese mixture and place on top of sauce. Spread remaining ricotta on top and layer with remaining sauce and mozzarella. Bake, covered, for 40 minutes.

it depends on what kind you want to make but it usually is ricotta cheese with an egg yolk mixed in to firm it up. you can add parmesan cheese to the mix to. after that you can add what ever flavors, herbs, and spices you like

Depending on what you like... most people put spinach, ground meat, ricotta cheese.... lots of things.. here's a fantastic recipe for it.

Use ricotta cheese, it is a soft cheese. I also used chopped up spinach and cottage cheese mixed in with the ricotta...mix it all up add some parmasan cheese and stuff those shells, then cover with the sauce you are going to use....sooo yummy.

stuffing mix for manicotti is usually ricotta cheese, mixed with italian spices and parmesan cheese
