Answers:
This is a very simple recipe to make a cake:

4oz (115g) self raising flour
4oz (115g) butter or margerine
4oz (115g) sugar - castor or granulated
2 eggs
1 tablespoon vanilla essence

Weigh out each ingredient, put them into a mixing bowl, mix them together with an electric whisk and pour into a greased cake tin or paper bun cases. Bake at the centre of a preheated oven at 200C/ Gas mark 6 for 20 minutes, or until a knife, inserted into the centre of the cake, comes out clean.

To adjust quantities you can do so by halving/quartering/doubling each ingredient.

If you want to variate the cake, you can replace 1oz of flour for 1oz of cocoa powder (not hot chocolate or milkshake powder but the unsweetened cocoa powder) to make a lovely chocolate cake.

Also, you can replace the vanilla essence with almond essence or any other flavouring you fancy.
You can add chunks of chocolate to the flour, egg, sugar, butter mixture, or dried fruit and a teaspoon of cinnamon.

Once you have baked your cake, leave it to cool on a wire rack and add a frosting.

There is a simple water icing, where you add water to icing sugar (add a little water at a time, and mix with a metal spoon until smooth).

Butter icing which is the same as above but with butter instead.

Chocolate icing, where you add cocoa powder to icing sugar and choose a method from above.

Chocolate frosting where you melt chocolate of your choice in a glass bowl over a pan of hot water. Once it has melted take it off the heat and remove the bowl from the water. CAREFUL - it will be HOT! Then slowly add some cream to it and stir it until it is mixed. Leave to cool slightly and it will thicken so you can spread it onto the cake.

Pour batter into a buttered 8" square cake pan and bake at 350 degrees for 20-30 minutes, until light golden brown, and cake begins to pull away from sides of pan.

INGREDIENTS:

* 1-3/4 cups flour
* 2 cups sugar
* 1/2 cup cocoa powder
* 1-1/2 tsp. baking soda
* 1-1/2 tsp. baking powder
* 1/4 tsp. salt
* 2 eggs
* 1 cup milk
* 1/2 cup oil
* 2 tsp. vanilla
* 1 cup boiling water

PREPARATION:
Preheat oven to 350 degrees F. Grease and dust with cocoa two 9" layer cake pans. Set aside.

In large bowl, combine sugar, flour, cocoa, baking powder, baking soda, and salt. Stir with wire whisk until blended.

You can make a cake from scratch. Flour, sugar, baking soda, baking powder, salt, cocoa powder (if you want a chocolate cake), mayonnaise (sounds strange I know but it makes a moister cake, especially for the chocolate one), milk or water, eggs. Flavorings such as almond (goes really well with cherries), vanilla, orange, mint (to go with the chocolate cake), lemon, the list is endless! just don't mix all these flavors together.
