me and my freinds are vegetirians and we are also junk food adicts.....we need some healthy meals that are also meat free!!!!

INGREDIENTS
2 onions, finely chopped
3 celery, thinly sliced
2 (6 ounce) packages dry instant long grain and wild rice mix
2 1/2 cups water
1 (10.75 ounce) can condensed cream of mushroom soup
1/2 cup butter
1/2 pound processed American cheese
1/2 cup sliced fresh mushrooms
DIRECTIONS
In a slow cooker, place onions, celery, rice mix, water, condensed cream of mushroom soup, butter, American cheese and mushrooms. Cover, and cook on Low 6 to 10 hours or on High 2 to 4 hours.

VEGETARIAN CHIMI CHANGAS
2 cloves garlic, chopped
10 medium mushrooms, sliced
1 large green pepper, sliced
1 medium-large onion, sliced
1 15 oz can black beans
1/2 cooked white or brown rice
1 cup mozzarella cheese, shredded
10" tortillas
cooking oil
garlic powder
black pepper
crushed red pepper
onion salt
In a frying pan saute garlic cloves, mushrooms, green peppers, onions until soft but still slightly crisp. In a bowl mix cooked rice, black beans together. In another pan heat about 1/2" inch of cooking oil. Warm the 10" tortillas in the microwave until soft. Place a 1-2 large spoonfuls of rice and beans, top with a large spoon of vegetables, and sprinkle with mozarella cheese. Season to taste with garlic powder, onion salt, crushed red pepper, and black pepper. Fold in the edges tightly, and place folded edges down in hot oil. Brown each side until golden brown. serve on a bed of lettuce and tomatoes topped with guacamole, sour cream and salsa. Very tasty!!
VEGETARIAN SPRING ROLLS
20 sheets spring roll wrappers
2 carrots
1 white cabbage
1 cup dry flavoured soy mince
300 g beansprouts
salt pepper
oil for frying
for dip:
soy sauce
white vinegar
Shred carrots and cabbage. Add beansprouts. Soak soy in a little bit of water untill damp. Add soy to mixture; salt and pepper to taste.
Wrap into spring roll sheets and then fry in oil.
Delicious with a soy sauce and white vinegar dip.
VEGETARIAN NACHOS
1 bag Nacho Cheese Doritos
1 cup shredded Colby cheese
1 jar Pace Picante Sauce (chunky)
1 jar jalepenos
2 tbs. sour cream
1 small can black olives
Take about 20-25 chips and place onto a microwavable safe plate.
Spread 1 cup Colby cheese onto the Doritos. Do not add sour cream until after heated. Heat in the microwave for 30 seconds to 1 minute (depending on microwave).
Spread Pace Picante sauce on top of the melted cheese and Doritos. Garnish with 2 heaping tablespoons of sour cream, black olives, and jalepenos.
Serve. Enjoy this fast and easy dish. It's a great meal at a cheap price for larger families. The kids will love it. Add lettuce or any other variety of ingredients to your liking.
VEGETARIAN LASAGNA
1 medium eggplant, fresh
1 pkg. frozen spinach
1 pkg. lasagna noodles
1 pkg. (pint, sm. one) low-fat cottage cheese
1 jar Favorite meatless sauce
1 sm. pkg. Mozzarella lite cheese
Salt and pepper
Several plump tomatoes
Parsley flakes
Defrost spinach, drain as much water out with a colander as possible. Cut eggplant in rounds thinly sliced, lay on paper towels and lightly salt, lay another paper towel on top and continue layering with eggplant rounds, salt, paper towel etc. Place a heavy pan on a cookie sheet on top of stack, let sit for at least 1/2 hour to 2 hours. Cook lasagna noodles until tender. Mix cottage cheese with spinach in a bowl, salt and pepper and season to taste. In a casserole pan, spread a light layer of sauce. Add layer of noodles, layer of eggplant, sauce, layer of cottage cheese, spinach mix, another layer of noodles and repeat process until pan is full or desired height achieved. Top with remaining Mozzarella cheese, tomato sauce and cover evenly with thinly sliced peeled tomatoes. Sprinkle on parsley flakes.
Bake at 350 degrees for 45 to 60 minutes, until eggplant is soft and has changed a brown color.
Chickpea and Vegetables Veggie Burger
INGREDIENTS:
2 cups mashed garbanzo beans (chickpeas)
1 stalk celery, diced
1 carrot, grated
1/2 onion, minced
1/2 tsp garlic powder
1/4 cup flour
salt and pepper to taste
oil for frying
PREPARATION:
Mash together all ingredients, except oil, thoroughly. Form into patties and lightly fry on each side in oil until golden brown. You can also barbecue these veggie burgers on a hot grill.

Vegetarian Chip Dip
ingredients:
1 bag of meatless ground beef substitute like Morning Star
16 oz. of sour cream
1 bag of shredded cheese
(optional) chives
1. Cook meatless meat until done.
2. Get a container and layer all of ingredients like - sour cream, cheese, meatless meat, cheese, sour cream, cheese, chives.
3. Get a bag of plain chips and enjoy. The dip is usually better if it is chilled before consuming.
lol...same here. I make brown rice with sugar snap peas, carrots with ranch, PB and banana sanwiches, Fruit smoothies with soy milk, Planters mixed nuts, salads, etc. I'd get a book, like "A Teenager's Guide to going Vegetarian."
Have an entree of salad before the meal [avocado goes well in the salad]. Mix it with a salad dressing (Oil [macadamia is nice], vinegar [fresh lime or lemon juice is nicer] garlic, French mustard [Dijon] Lettuce, tomato, etc. Or simply serve some cucumber if your partial to it. Snow peas go well in the salad and taste great raw or lightly cooked with the meal.
Try this. Stir fry vegetables with mashed potato. Or this. Steamed vegetables nuts and seeds. You can drape the vegetables with tahini (ground sesame seeds). Or check out some foreign food recipes and modify them a little to suit local foods and your vegetarian preferences.
