Tofu Fries

-tofu
-Kikoman soy sauce
-seasoned salt
-flour
-pepper
-seasonings
-vegetable oil

-----Mix flour with seasoned salt pepper and seasonings
-----Cut tofu into fry like shape (rectangle)not too skinny
-----Soak cut tofu in soy sauce for 5-10 minutes
-----Toss soaked tofu into flour mixture
-----Fry flour coated tofu in oil till fries become golden brown
-----Take fries out of oil and put on a paper till cool and dry
-----Enjoy!!!

I usually buy tofu in 14 oz. blocks. My favorite way to prepare it is to squeeze the water out of it (I just press it between my hands over the sink), and cut it into 1/2 inch cubes. Then marinade in 3T each soy sauce and white vinegar, with a splash of sesame oil and about a tablespoon each of sesame seeds and thinly sliced green onion or scallions. Then just a dash or two of hot sauce and some freshly ground black pepper.

Doesn't have to marinade for long. When you squeeze the water out of it it behaves as a sponge. Served warm (heated in microwave) over brown rice is the BEST! <(recipe from one of the Molly Katzen cookbooks - I forget which one!)>
