Quesadillas if you have flour tortillas, or add some minced onion, additional cheese, and corn tortillas and make an enchilada casserole.
Tear 12 corn tortillas into bite-sized pieces, add soup, 1 soupcan milk, drained chicken, 1/4-1/2 cup minced onion (the more onion, the hotter the end result.) Stir to coat and separate tortilla bits. Turn into greased 9x13 pan and top with 1 cup grated cheese; bake uncovered 30 minutes at 350.
Refried beans and salad would make good side dishes.

Chicken quesadias

Slice up some potatoes, peppers and onions, and make a casserole?

You can make a dip or chicken quesadias...Both are great buy hardly interchangeable!!!

boil half a package of macaroni, add the soup, cover with more cheese and bake.

Add diced tomatoes, onions, jalepenos and make a dip served with tostitos...yummy

Add diced potatoes, frozen corn, diced red and green pepper. Put in a pinch of cumin and you have a nice southwest chicken corn chowder. simmer until potatoes are tender.

You can make quesadillas or enchiladas. You could also make a bag/box of mexican rice to fill the enchiladas with the chicken and then pour the pepper jack cheese soup over to bake.

If you like casseroles, you could adapt my recipe by using any canned chunk meat (ham, chicken, turkey etc.), any canned cheese soup (Pepper Jack, cheddar etc). I found this recipe in Better Homes and Garden magazine back in the 80's and it has been a requested dish in my family since.

Ham & Broccoli Casserole
2 cups cooked rice
2 cans chunk ham
2 cans cheddar cheese soup
1 cup sour cream
2 cups cooked brocolli

Mix all ingredients together and put in casserole dish. Top with 1/3 cup buttered bread crumbs and bake in 350 deg oven for 30 minutes.

Note: Depending on how you like your casserole, saucy or a bit drier, use more or less rice, vegetable, meat or soup.
