That's what I'm making for dinner anyway.
Here's a recipe, but I use chopped up Tofurkey sun dried tomato unsausage and diced red and green pepper - yum!

Pizza is always good, too. That's what I'm making for lunch tomorrow.
That Follow Your Heart meltable vegan cheese has changed my world. I even made nachos the other day.

What about going to the store and just going crazy with the veggies and making a big pot of soup? Throw all kinds of spices in there and see what happens. That could be fun.

And then there's always peanut butter sandwiches. You can get creative. Carob chips and fluff? Mushed up banana and cinnamon?

Mmm my zucchini boats just beeped at me.

are you vegan or vegetarian?
one of my favorite vegan cookbooks is "Vegan With A Vengeance" by Isa Chandra Moskowitz and there's a lot of vegetarian magazines out with both vegan and vegetarian recipes. You can convert really anything that you like to eat into a vegan meal just by substituting soy milk, vegan margarine, egg substitutes, etc. An idea of what you're looking for would be helpful though.. what do you like to eat?

No nasty crap? Well, that leaves out tofu and much of the stuff these folk eat. Sorry!
