1 cup nonfat sour cream
1 (20 ounce) can crushed pineapple, well drained
1 tablespoon Splenda sugar substitute

Combine graham cracker crumbs and margarine; press into bottom and upsides of 8-inch pie pan.
Bake at 350° for 8 to 10 minutes. Set aside to cool.
In a large bowl, combine pudding mix and sour cream; mix well. Stir in pineapple and Splenda.
Spread into cool crust. Chill at least 3 hours before serving.
Try this with sugar free pistachio pudding for a lovely green pie for St. Paddy's Day.

Sugar-free Banana Pineapple Dessert

graham cracker crust
4 or 5 ripe bananas
1 (20 oz.) can pineapple in its own juice, WELL-DRAINED
2 small pkgs. sugar-free instant vanilla pudding
12 oz. tub Cool Whip Lite

Make a graham cracker crust in a 13 x 9" glass dish. Slice bananas over crust. Distribute pineapple evenly over bananas. Pour pudding over pineapple. Spread Cool Whip over all. Refrigerate.
cup Splenda
? cup GF flour
3 eggs
1 ? cups buttermilk
2 tsp vanilla extract
1 tsp lemon extract
2/3 stick melted butter
1 small can crushed pineapple (in juice not syrup)

preparation
Spray a deep dish glass pie pan with a cooking spray. Pre-heat oven to 425. Beat eggs, buttermilk, melted butter, and extracts together. Add GF (gluten free) flour and Splenda and beat until well mixed. Stir in pineapple and pour into pie pan. Bake 10 minutes and reduce the heat to 350 and continue to bake for 35 minutes or until top is lightly browned and a knife inserted into the center comes out clean. Cool before cutting.

My boyfriend makes killer teriyaki salmon with pineapples on top!!! Soooooo good!!! Bake in oven!

Grilled Ham and Pineapple kabobs are very Yummy. Buy pre cooked ham and cut into chunks. Cut up your pineapple into chunks. Toss on the grill til heated. They are sooo good. My daughter loves them. She's 9.

If you like seafood, this is a wonderful recipe for scallops and pineapple! I have made them once with the avocado, and once without..these are really goooooood!!

* 2 tsp. finely shredded lime peel
* 1/4 cup lime juice
* 1/4 cup snipped fresh cilantro
* 2 small green and/or red jalapeno pepper, seeded and finely chopped
* 2 tsp. sugar
* 1/2 tsp. salt
* 1/2 tsp. black pepper
* 1/3 cup canola oil
* 16 sea scallops (about 1-1/2 lb.)
* 12 large fresh pineapple chunks
* 1 avocado, peeled, pitted, and cut into 8 chunks

In a small bowl combine lime peel, lime juice, cilantro, jalapeno, sugar, salt, and pepper. Slowly whisk in oil until combined; set aside.
In a large bowl combine scallops, pineapple, and avocado. Toss with 2 tablespoons of the lime juice mixture. Let stand for 15 minutes, stirring occasionally.
Do not marinate longer, or scallops will get tough!!!
Alternately thread 4 scallops, 3 pineapple chunks and 2 avocado chunks on each of 4 12- to 16-inch skewers.
Grill kabobs on a well-greased grill rack directly over medium-high heat for about 8 minutes or until scallops turn opaque, turning once halfway through grilling. Transfer kabobs to a serving platter and serve with remaining lime juice mixture.

I find this recipe very refreshing in the summer. Take a head of lettuce,rinse & dry. Use as much as you will eat or use it all if feeding more than one. Use 1 can Chunky pineapple (cold) drain the juice.Use 2 cans if you want more. Add to lettece and then shredd med cheddar cheese on that., mix with small amount of mayo or can leave plain.Just mix it up and great and sure is cool. Hope you like it.God Bless.

slice it and soak your pineapple in limoncello (A lemon liquer). Grill it on both sides. Drizzle some honey and mint on it and top it with vanilla ice cream.

Watergate Salad
1 lg can crushed pineapple
1 box pistachio instant pudding
1 c. mini marshmallows
1/2 c. coconut
1 lg carton Cool whip
Mix pineapple and pudding mix together; then add marshmallows,
coconut and Cool whip. Mix and Chill.

Pig Out Cake
1 box of yellow cake mix
1 small can (11oz) of mandarin oranges, undrained
1/2 c. oil
4- eggs
Icing:
12-16 oz Cool whip (I use 16 oz)
1 lg. can crushed pineapple, undrained
1 sm. pkg. instant vanilla pudding
Combine cake ingredients and mix well. Bake in rectangle pan at 350 degrees for approximately 30 minutes or until inserted tooth pick comes out clean.
Combine icing ingredients and spread on cooled cake.
Cake does need to be refrigerated until ready to serve.
* I sometimes add flaked coconut to the icing mixture.

I found this recipe in Taste of Home, my family loves it.
"Pineapple Paradise Pie"
1 can (14 oz) sweetened condensed milk
1 carton (12 oz) frozen whipped topping, thawed
1 can (20 oz) crushed pineapple, drained
1/3 cup of lemon juice
2 graham cracker crusts (8 in)
1 cup flaked coconut, toasted (optional)

Place the milk in a bowl; fold in whipped topping. Add pineapple and lemon juice; stir for 2 minutes or until slightly thickened. Pour into crusts. Sprinkle with coconut. Cover and refrigerate for at least 2 hours. Yield: 2 pies (6 servings each).
Note: I sometimes add thinly sliced bananas and strawberries to make it interesting.
