Answers:
Tortilla de patatas (potatoes diced, fried in an egg batter).
Paella ( distant cousin of the jambalaya, but you add saffron to the rice).
Torto (sourdough bread filled with chorizo and bacon).
Croquetas (crispy cilindrical fritters with chicken or bacon).
Gazpacho (cold vegetable soup that is drank in summer).
Chapatas (rectangular hard rolls whcih you slice through the middle, rub with garlic and tomato and drizzle with olive oil).
And lots of red wine or sidra (cider).

There's a show called Bizarre Foods with Andrew Zimmiern that airs on the Travel Challnel network. If you get this channel, it's worth watching. He goe to the oldest restaurant in the world that happens to be in Madrid and eats a dish made of baby Eels and go Tapas hopping.
