5. How are the following products tested for fat content: butter, peanut butter, lard, cod-liver oil, castor oil?


Answers:
u do a distilation in which it will separate the fat particles from other non-fat liquids. then u do a refined filtering of the product and then do a recrystalization of the fat using NaBO3. that will solidify the fat and u can then determine the amount of fat in grams with a scale.

There are literally dozens of ways... Most can be separated by cetrifuge (physical separation), many are chemically separated, a few must be heat oxidized (cooked/burned) to determine the fat calorie content. Specific gravity and volumetrics can be used to calculate percentages of fat. There are electronic probes that either pass electrical impulses through particular substances to detemine the percentage makeup of known ingredients; while others use mass spectrometry to identify the ingredients.
