Interesting Panini combinations??

I love experimenting with interesting combinations for panini sandwiches and am running out of ideas. Need some suggestions!!

I love paninis too. My favorite is chicken with mozzarella and pesto. You just have to put a lot of pesto. Another good one is Thai chicken. You put chicken, sweet peppers, mozzarella, and a peanut sauce, my favorite is Bangkok Padang Peanut Sauce. They are both so good, and so easy to make. I like my sandwiches on big slices of french bread, but you could make them on anything.

One of my favorite panini's consists of baby spinach, fresh mozarella, procuitto and some sauteed portabella mushrooms with red onion!

chicken and grilled avocado! yum! :)

How about smoked turkey, caramelized pear, bleu cheese (or tallegio), and arugula?

Paper thin slices of proscuitto on focacaccia that has been bathed in dijon aioli, melt on some provolone then serve with just a tad bit of balsamic vinaigrette and arrugula.

1. try using sweetened condensed milk - great with coffee or tea

2. cottage cheese, dried salted fish flakes and tomatoes

Smoked turkey, provolone, sliced tomato and red onion.
Roast beef, roasted red pepper, horseradish sauce.
Ham, salami, provolone and mustard.
Roasted veggies like eggplant, zucchini, onion slices, etc with cheese and garlic mayo.
