Question:

How can I fix a chocolate ganache that is too thin?

I made a chocolate ganache to top a cheesecake layered with Itailan custard from a recipie and the ganache is still thinner than I would like.


Answers:
Stir in some more chocolate while holding the bowl over a pan of boiling water or in a double boiler. You can keep adding chocolate until the desired thickness is reached.

Use the same type of chocolate you've already used in the mixture. Chop it into bite sized pieces, and then use a double boiler to melt the chocolate.

Add a touch of sour cream until desired thickness is achieved.

The ganache will thicken naturally as it cools.
