Cut it up, toss with cornmeal, put in freezer container or bags and toss into the freezer. Perfect and ready to fry, no need to thaw. It can be frozen for up to 18 months without quality issues. Beyond that it will not be as nice, it will be safe to eat, just not as nice.

you can store things up to a year.I did some green peppers but they were soggy.

To freeze okra, wash and dry thoroughly and then cut into pieces and freeze. They can be used directly for cooking and need not be thawed.
I have frozen them up to 4 months.

cut it up while fresh, DO NOT COOK IT, put it on a baking pan or a pizza pan, 1 layer deep. put the pan into the freezer. leave it in there until it freezes. take it out and use a hamburger flipper to unstick it from the pan. put it into ziplock-type freezer bags. it will not clump together.

small okra(little finger size) will freeze whole. big okra gets tough and papery.

the cut up is better.

My okra is cooked before freezing. It is called smothered okra. I use a magnelite oval roaster.I place 1/2 cup corn oil in the bottom of the pot then add washed sliced okra until my pot is filled to the top.Leave enough room for a large can of diced tomatoes, a large onion chopped and a large bell pepper chopped. Add minced garlic to your option and add seasoning. Cook over medium heat until the slime is gone usually one and one half hours.Stir occasionally while cooking.
When cooled store in quart size freezer bags. I freeze 30 quarts of smothered okra every year which is eaten as a side dish or in gumbos.
