Pasta is always a good bet, I hope you like these recipes

CREAMY PASTA PRIMAVERA

12 ounces pasta, bowtie noodles
2 yellow squash, thinly sliced
10 ounces asparagus spears, cut in 2" pieces
8 ounces baby carrots, cut lengthwise, half
2 tablespoons all-purpose flour
2 cups skim milk
1/4 cup sour cream, light
2 tablespoons Dijon mustard
2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon pepper
2 ounces feta cheese, crumbled

Add pasta to a large pot of boiling water and cook 10 minutes. Add squash, asparagus and carrots and cook 8 minutes or until pasta and vegetables are tender. Drain and place in a large serving bowl.
Meanwhile put flour in a large skillet. Slowly whisk in milk until blended, taking care to get into corners of skillet. Bring to a boil over medium-high heat, stirring often. Reduce heat to low and simmer 3 to 4 minutes, stirring constantly, until sauce thickens slightly. Remove from heat, whisk in sour cream, mustard, lemon juice, salt and pepper.

Pour over pasta mixture and stir to mix and coat. Sprinkle with cheese.

Serving Size: 4

RAPID PASTA (BECKY'S PASTA)

Pasta (half a pan)
1 tin Tuna
Cheese to taste
1 tin Sweet corn
Virgin Olive Oil
Oregano
Pepper
Water

Add a "dash" of virgin olive oil and a generous pinch of oregano to a pan of water. Bring to the boil.
Add Pasta (two handfuls per person), be aware that pasta expands and that your pan is big enough.

Lower heat to a simmer. When the pasta is soft (about 20 mins), turn off the heat, drain the pasta, and leave in the pan. If the pan is not big enough to stir the contents, move the pasta to large mixing bowl.

Drain any fluids from the Tuna and Sweet corn cans, then add to the pasta. Stir to ensure the tuna breaks up. Add a sprinkle of pepper. Spoon onto plates. Grate cheese onto the top and serve.

Instead of Tuna and Sweet corn try these variations:

Sausage and Tomato (throw in a can of pasta sauce or canned tomatoes works too).

Bacon and Sweet corn.

Ham and Pineapple.

This is a nice "fast food" alternative to less healthier alternatives, and my daughter loves it!

Ramen noodles with a side of a fruit or veggie or just Ramon noodles.

Also pizza.

Make hummus! Buy a can of garbanzo beans, drain and mash with a potato masher. Add crushed cloves of garlic, and some black pepper, and a dash of lemon juice. (or better yet, search for a recipe on the web) Spread on tortillas or flatbread, put sliced tomatoes and sliced cucumber on top. Yummy AND low fat, relatively......

Slow cooker recipe-Buy a roast-1 jar of peppercini's-dump the peppers over the roast-snip of the tips (of the peppercinis) is you like it spicy-cook until you can start shredding the beef and do so while it is in the cooker-you may have to add water (or another jar of peppercinis)to keep the beef from scorching-but you will have the best beef sandwiches ever!!

Cook 1 box of mac and cheese and then add 1 can of drained tuna mix well and serve. a can of green beans or peas ,and a can of sliced peaches or pears as side dishes .

4.while waiting for the water to boil take the bread and place it on a rack in the oven (according to the instructions) so it can warm up. TIP- I always sprinkle some shredded cheese on the bread before baking it.
5.After 6 minutes drain pasta and mix with the sauce and meat.
6.Take out the bread when the cheese is all melted and there ya go a yummy easy and quick meal even for a fairly large family!

When I was younger, my grand mom would make the best chicken and rice soup. It is so simple, and so good. Just get a whole chicken and put in a stock pot and cover with water. Add a generous amount of salt and pepper, then boil until the chicken is falling off the bone. Probably 1.5 to 2 hours. Check water level frequently and add more if needed. When the chicken is done, remove from broth. Skim any small bones or foam from the broth. Bring broth to a boil and add 1 to 2 cups of white rice (depending on how much broth you have, I like the end result to be thick, but soupy. In other words, I like lots of rice and chicken in it, but I don't like the rice to soak up all the broth, KWIM) You can add some butter for flavor. I have done it with or without. Cook rice until done. In the meantime, remove meat from bones, discarding skin and bones. When rice is done, add chicken to pot. Ladle into bowls, and serve hot with a good bread (maybe Italian, or some good dinner rolls...I like snowflake rolls) and real butter. Also, you could add a salad. It is one of my favorite comfort foods....Yum! I think I may make that for dinner tomorrow.
