there's all sorts of ways to grade and group coffees.

The most common is by region, the 3 main growing regions are Latin (for example, Colombia, Mexico, and Brazil, all major growing regions), Asian (Indoenesia and small parts of tropical Thailand), and African (Ethiopia).

If you want to dissect it even more, there's Arabica and Robusta. Arabica coffee are gorwn at high altitudes, and Robusta in lower alttitudes, Arabica is very fine tasting while Robusta will make you scrunch up your face in disgust.

And if you're talking about flavor elements, you can describe a coffee as smoky, or carbony (like a dark roasted italian espresso style bean), sweet and mellow (like many latin beans), nutty (again, latin), or even earthy and herbal (asian). African coffees often has citrusy and grapefuit elements to it.

There's also light, dark, and medium roast coffees
Mild and bold
and there's 3 washes, acid washed, water washed, and dry wash (sun drying).
