SPAGHETTI SANDWICHES

1 lb. regular spaghetti
spaghetti sauce (any flavor)
white or wheat bread
whipped butter
milk
salt

In large pot bring water to a boil. Add a pinch of salt or two to taste. Add spaghetti being sure to break in two from box. When spaghetti tests done (about 10 minutes), drain.
Return spaghetti to pot and add sauce.

Turn on low heat and stir -- Cook just enough to heat. Remove from heat.

Spread butter on bread slices and add spaghetti to bread, folding over.

Serve with a cold glass of milk and make sure there are plenty of napkins! The combination of sauce, pasta, bread, butter, and milk is a real treat!


CHICKEN SPAGHETTI WITH VELVEETA

4 boneless chicken breast
8oz Velveeta
1 can Rotel
1 can Cream of Mushroom
1 package spaghetti
milk
salt
pepper
garlic

Boil chicken (Cooks Note: for more tender chicken, don't boil; simmer slowly over low heat instead). Drain broth into a bowl and reserve.
Boil spaghetti according to package directions.

Cut chicken into bite-sized pieces.

Combine: chicken, spaghetti, Cream of Mushroom, Rotel (not the whole can), salt, pepper, garlic.

Melt Velveeta in microwave. Stir in milk, just enough to make it as creamy as desired.

Combine Velveeta with remaining ingredients, season to taste and serve.


PASTA PUTTANESCA

1/8-1/4 cup pancetta, finely diced
3 tablespoons olive oil
5-8 cloves garlic, peeled and minced
1 large can (approx 35oz) whole peeled Italian tomatoes
1 dozen oil-cured black olives, pitted and chopped
3 anchovies, finely mashed (optional)
2 tabelspoons red wine vinegar
a pinch red hot pepper flakes
2 tablespoons each fresh basil and oregano
1/4 cup chopped fresh parsley (save a little for sprinkling)
1 bay leaf
Romano or Parmesan cheese (for sprinkling)
1 lb pasta, cooked according to package directions
salt and pepper, to taste

Note: If you don't have fresh herbs available, substitute 1/2 teaspoon each dry oregano and basil.
In a large skillet, sauté pancetta over low heat in olive oil until soft and translucent; bring heat up and allow to pancetta to brown slightly on edges.

Add garlic, oregano, basil, red pepper flakes, parsley and olives. Mash the anchovies well into the oil, using the tines of a fork. Tip: You can do this with the garlic after it's cooked, too, if you want to avoid having to mince them - just leave the cloves whole and mash them into the oil when they take on a little light coloring. Be careful not to let garlic brown or the oil with be bitter.

When garlic begins to take on the slightest color and herbs permeate the air, add the can of whole tomatoes (including the juice in the can). Submerge the bay leaf in the sauce.

Simmer over medium-low heat, with just the occasional lazy bubble surfacing for 20 minutes or so, until the sauce begins to thicken slightly. Stir in wine vinegar during final 10-15 minutes of cooking. Taste and adjust seasonings.

Meanwhile, as sauce simmers, bring a large pot of water to a boil and cook pasta according to package directions and drain.

In a large bowl, combine pasta with enough sauce to coat. Add a little of the pasta cooking water if sauce is too thick, or a teaspoon of olive oil. Sprinkle pasta with a little fresh parsley and cheese before serving. (Remove bay leaf before serving).

Here's an easy cheesy one for you. Make up your favorite mac and cheese dinner according to directions. Spread it out in a 13 X 9 pan. Now brown some hamburger and onion and drain it. Add your favorite spaghetti sauce to the hamburger. Spread the hamburger and spaghetti sauce mixture over the mac and cheese. Top with grated cheese, your choice. Heat till cheese on top is melted. It's easy and great.

Salmon with Lemon, Capers, and Rosemary

4 (6-ounce) salmon fillets
1/4 cup extra-virgin olive oil
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon minced fresh rosemary leaves
8 lemon slices (about 2 lemons)
1/4 cup lemon juice (about 1 lemon)
1/2 cup Marsala wine (or white wine)
4 teaspoons capers
4 pieces of aluminum foil



Brush top and bottom of salmon fillets with olive oil and season with salt, pepper, and rosemary. Place each piece of seasoned salmon on a piece of foil large enough to fold over and seal. Top the each piece of salmon with 2 lemon slices, 1 tablespoon of lemon juice, 2 tablespoons of wine, and 1 teaspoon of capers. Wrap up salmon tightly in the foil packets.
Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Place the foil packets on the hot grill and cook for 10 minutes for a 1-inch thick piece of salmon. Serve in the foil packets.

IN separate bowl, mix one 8-ounce container cottage cheese, 1 egg, 1/4 teaspoon basil and 1/3 cup Parmesan chess. Grease baking dish and place a layer of thinly sliced zucchini on bottom (about 2 cups). Sprinkle with 2 tablespoons finely ground popcorn.Layer on 1/2 the cottage cheese mixture followed by 1/2 the meat mixture and repeat with remaining mixtures. Bake at 375 F for 20 minutes. Top with 1/2 cup coarsely ground popcorn and bake for 10 minutes or longer.

add all except the cheese in a llx7 dish, cover and bake 350 F for 25 - 30 min. then put cheese on top and bake uncovered for about 3 or 5 min or until melted.
