if it's been sitting for two weeks, just get new eggplant. Eggplants are ready to harvest when the skin takes on a high gloss, at a third to half their mature size. To test for readiness, press the skin with your finger. If the indent does not spring back, it is ready to harvest. Fruits with dark brown seeds inside are past their prime.

It isn't fresh but as long as it hasn't started to go squishy then it'll be fine to cook and eat.

chuck it and get a fresh one.

Egg plant that is off will be watery and will have fungus.
Brown seeds are not a sign of aging although the "meat" of the egg plant around the seeds should not be discolored.
If you still are unsure, get new ones.

An eggplant is stale when the skin puckers and wrinkles. That being said, why would you want to cook (and therefore eat) an eggplant that's been in your fridge for two weeks? There's probably not very much food value or flavor left.
