Answers:
No, you can't really do that very succesfully. It doesn't have enough fat content to withstand the defrost, never mind any cooking, without going grainy, almost 9 times out of 10, no matter how careful you are. Double/heavy cream, on the other hand, freezes very successfully indeed. If you decide to chance it, don't keep it frozen for more than 4-6 weeks (depending on your freezer's rating) at most, before use. (In freezing terms, think of it as really rich milk, rather than cream, you might say.)
