Hi there. Recipes for this using Khoya (dried milk) instead of a form of yoghurt are thin on the ground -- I haven't been able to track one down explicitly. I have, however got this one which uses water, which of course you could change to Khoya dissolved in the volume of water as given? So you can compare with a yoghurt version and possibly merge the two recipes to your taste, I've tacked one of those on at the end for you as well. See what you think:

Kaju Paneer (1)

Ingredients :
150 gms Paneer
1/2 cup kaju
3 chopped tomatoes
1'' piece chopped ginger
1 cup water
3 tsp watermelon seeds
1 tsp khus khus
1/2 cup milk
1/2 tsp garam masala
salt

Method :
Fry 150 gms Paneer till golden. Remove, add in the same oil fry 1/2 cup kajus and keep aside. Cool and grind into a paste. Boil 3 chopped tomatoes, 1" piece chopped ginger with 1 cup water, till tomatoes are soft. Cool and then puree. Soak 3 tsp watermelon seeds and 1 tsp khus khus for 1 min. Grind to paste. Heat 2 tbsp oil and add tomato puree and cook till oil separates. Add 1/2 tsp chilli powder and khus-khus paste and mix. Add 1/2 cup milk gradually, stirring constantly, and cook for 3-4 mins. Add 1/2 tsp garam masala and salt. Add enough hot water to get a thick gravy. Boil and then simmer for 10-12 mins. Add paneer and kaju. Boil once more, simmer for 5-mins till paneer is heated through the serve.

Paneer-Kaju Kari (2)

Preparation time: 20 minutes

Ingredients

* Paneer (Cottage Cheese), 200 g, diced
* Kaju (cashew nut ), 1/2 cup paste
* Cardamom, small, 2
* Cumin seeds 1 tsp
* Yogurt (Curd), 1 cup
* Green chilli, 7-10 or to taste
* Butter 2 Tbsp
* Coriander leaves, chopped, 1 Tbsp
* Salt to taste
* Oil for frying (Optional)
* Water, 1 cup

Preparation:

1. Heat butter in a non stick pan, add cumin seeds. When the seeds cracke, add green chilli and cardamom. Saute for a while, then add kaju paste with stirring continously.

2. After 2 minutes, add yogurt and paneer, saute for 2 minutes. Add 1 cup water and salt. Cover the pan and reduce the flame to low for 5 minutes.

3. Garnish with coriander leaves.

Serve hot.

Note: This paneer-kaju recipe is special meant for Navaratri Navratras.
