Looking for a recipe for Edisto Grits?

My hubby and I ate a dish called Edisto Grits at a Charleston, SC restaurant. I'm looking to see if anyone has the recipe for this dish.

? 1 med. Chopped onion
? ? lb. bacon, fried crisp
? ? lb. hot Polish sausage (take off casing and make into tiny balls)
? 1 ? T. flour
? 1 ? C. fresh shrimp, peeled and deveined

? 2 T. ketchup
? 1 t. Worcestershire sauce
? 4 drops hot sauce
? S&P to taste
? 3 cups cooked grits

Fry bacon and sausage, and remove all but about 2 T. grease. Stir in flour and cook until browned. Add shrimp, water, ketchup, and other ingred. And simmer about 15 min. (Don’t add too much extra water or the flavor isn’t as good.). Serve over hot grits with bacon crumbled over the top.


To cook grits in the crock pot: 10 c. water (or chicken broth), 2 ? c. grits, and salt to taste. Cook on low overnight and when you get ready to serve, stir, turn to high and add lots of butter, cream cheese, and cream to taste.

Simple Baked Cheese Grits Serves 4.


1 cup grits, stone ground
8 ounces shredded sharp Cheddar cheese
? cup butter
3 eggs, well beaten
1/3 cup + 1 tablespoon milk

Preheat oven to 350°.
Cook grits according to package directions.
Stir in the shredded cheese, butter, eggs, and milk.
Pour into a buttered 1-quart baking dish.
Bake 45 minutes, or until set.

I found this recipe on the web some time ago. I have prepared the dish several times. It is just like the Edisto Grits that come with the Edisto Grits and Shrimp on the menu of a popular South Carolina restaurant.

INGREDIENTS:

3 cups water
1/2 teaspoon salt
1 cup hominy grits
freshly ground black pepper
1 tablespoon butter
1/2 cup shredded sharp Cheddar cheese

DIRECTIONS:

Bring the water and salt to a boil in a saucepan. Whisk in the grits and continue to whisk for 1 minute. When the mixture comes to a boil again, turn the heat to low. Stir frequently, cook for 10 to 15 minutes.
Remove the grits from the heat and add pepper, butter and cheese; mix well. Stir until the butter and cheese are melted.

GRITS WITH SHRIMP GRAVY (Edisto Grits)

1 1/2 pounds fresh or frozen medium shrimp
5 slices bacon
1 cup green onion, thinly sliced
1 medium green sweet pepper (3/4 cup), chopped
4 cloves garlic, minced
1 tablespoon all-purpose flour
1/4 teaspoon garlic salt
1/4 teaspoon ground black pepper
12 ounces fresh mushrooms (4 1/2 cups), sliced
3 cups hot cooked grits

Thaw shrimp, if frozen. Peel and devein shrimp. Rinse shrimp; pat dry. Set aside.

In a large skillet, cook bacon until crisp. Remove bacon from skillet; drain on paper towels. Reserve 2 tablespoons drippings in the skillet. Crumble bacon and set aside.

Heat reserved bacon drippings over medium heat. Add green onion, sweet pepper, and garlic; cook until tender. Stir in the flour, garlic salt, and black pepper. Stir in sliced mushrooms and shrimp. Cover and cook about 5 minutes or until shrimp turn pink and mushrooms are tender, stirring mixture occasionally.

Serve immediately with hot cooked grits. Top each serving with crumbled bacon.
