Refrigeration

Covered in the refrigerator ungarnished cheesecake can be safely stored for about 2 days. Garnish just before serving.

Freezing

Prepare cheesecake the way you normally would BUT omit the topping/garnish. Wrap the plain ungarnished cheesecake securely in plastic wrap followed by foil. Freeze for up to 2 months.

Defrosting

Whole Cheesecake: thaw wrapped cheesecake in refrigerator overnight. Do not defrost whole cheesecake in microwave oven.

Individual cheesecake slices: may be thawed on microwaveable plate on DEFROST (30% POWER) for 45 to 60 seconds. Let stand about 5 minutes until thawed

I would check the packaging it will normally tell you. If it doesn't then I would suggest not. Bear in mind it takes about 1hr 30mins to defrost.

Yes you can freeze cheesecake as long as you defrost it properly before eating it, however was defrosted it can't be re-frozen.

Hi Yes - you can freeze cheesecakes. I do it all the time. I have frozen them over a month and they were great! This is the wonderful thing about cheesecakes, is that you can freeze them ahead and use later. Freezing for more than a month is not recommended to retain the best quality.
Cool the cheesecake completely before freezing.

To use bottom of springform pan - Remove the outer rim (sides) of the springform pan, leaving the cheesecake sitting on the bottom of the pan. I then wrap each cheesecake (with the bottom of the pan) with several layers of plastic wrap(clingfilm) and then a layer over the outside with aluminum foil.

To use a cardboard bottom - After the cheesecake is completely cooled, use a knife to separate the cheesecake from the pan bottom. Slide it onto a foil-wrapped piece of heavy cardboard. Then wrap each cheesecake (with the bottom of the pan) with several layers of plastic wrap and then a layer over the outside with aluminum foil.

For a cheesecake with topping, such as fruit, always freeze cheesecake WITHOUT the topping and add the topping before serving.

Always thaw a cheesecake overnight in the refrigerator. When partially thawed, transfer it from the cardboard or springform bottom to a serving plate.

i used to work at a restaurant where we froze our cheesecakes and then would take out what we thought we needed each day to thaw them out. the cheesecake kept well in the freezer and still tasted delicious after being thawed (bc i had to test it before i gave it to my customers)

If it's in a springform pan, remove sides of pan and freeze with the pan bottom in place. After 1 hour, use a knife to separate the cheesecake from the pan bottom. yes it is absolutely safe to freeze it..I was a manager at a restaurant and we had frozen cheesecake. Always thaw first though. You can even freeze with nutty or chocolate toppings although i don't recommend freezing with fruit toppings. I also have made and frozen cheesecake at home with excellent results. just wrap tightly in plastic wrap before freezing, the more airtight the seal around your cheesecake the better your chances of avoiding freezer burn. good luck!
