Any idea's for jacket potato filler?

making Jacket potato tonight, but don't want the usual boring beans and cheese. I'm expecting so can't have some cheese's and mayo. which is a bit poo! but anyone with some ideas to feed this greedy child?
any recipes?

Chilli or chicken & bacon or bolognese

fry some mushrooms in butter, scoop out the cooked potato - mix with gratted cheese and mushrooms and cooked broccili. put back in the shell, make a little dipin the mixture, crack an egg in it and put back in the oven till the egg is done. its lovely.

u can still eat mayo love, ignore what people say! i ate it through out... and most of the things i was told not to eat, and all was totally fine! just stay away from he cheese made from mould and the raw foods. mayo is made from the egg white not yolk its ok. ......But anyway!!
Going back to the question, Id have Egg Mayo and cheese,
OR
if you really dont want mayo have tuna swwetcorn and feta cheese! yum!

Jackdaw, nettles and a dung beetle. Sprinkle some grated badger over the top. Lovely. Nice with a dusting of cat cheese and a glass of beetroot wine.

Chilli - not too spicy tho!

Some good recipes here I love mine with chilli or bolognaise. But why cant you have Mayo most mayo is made with pasteurised eggs so you should be able to eat it check the label it should tell you (you try telling me wife she's not to have mayo when she was pregnant)

Cottage cheese with fresh cucumber and just a little cut chives

Slice some wafer thin ham,fine dice red onion,tomatoes add mixed herbs splash of olive oil.mix together then add to jacket.add cheese if you wish but its lush! enjoy!

spicy chilli with a creamy coleslaw the combination is lovely and not to spicy

or scoop out skins add bacon cheese and spring onion put mback into roast and serve with sour cream dip mmm you have maid me hungry

No good for you for tonight, but I have a book called "Baked Potato Fillings", published by Hamlyn. ISBN 0-600-58259-0
Describes itself as "60 easy recipes for making good food fast". The sections are Vegetable & cheese (you could leave out the cheese if you are vegan), Meat Fillings, Poultry Fillings and Fish Fillings (no pudding recipes!)
See if your local library can get it for you - you could photocopy recipes which appeal for a future date.

Get some taco seasoning and some ground beef (you can use the taco kits if you're lazy). Stuff the jackets with this - sour cream on the side. Yum.

Flaked smoked Haddock in a creamy sauce.

Veggie chilli

You can make it like a taco and use the potato skin as the shell, very yummy. My favorite is chunks of chicken and cheese.

2 x 225g (8oz) British potatoes, scrubbed
15g (1/2oz) butter
2 Cloves, crushed garlic
175g (6oz) sliced mushrooms
2 x 15ml spn (2 tblspn) cream cheese
2 x 15ml spn (2 tblspn) freshly chopped herbs (rosemary, parsley & thyme)
salt
freshly ground black pepper

Directions
Scrub the potatoes and place in a pre-heated King Edward oven at approx 200°C.
Cook for approximately 1 hour until thoroughly cooked.
After the potato has been cooking for about 45 minutes, melt the butter in a saucepan, add the garlic and mushrooms and cook gently for 5 minutes
Stir in the cream cheese and continue cooking for 1 minute. Add the herbs and season to taste.
When the potatoes are cooked cut them almost in half lengthways and spoon in the mushroom sauce.

Believe it or not, spreading a bit of marmite on the cut-open spud is delish - and if you are expecting, think of all that good folic acid it has in it...

...or if you are one of the ones that hate marmite, how about hummus, diced red onion and black pepper?

what about a mild curry? like korma or tika? or chicken and bacon in mayonaise?

a baked spud, with some butter, beans and cheese.........mmmmmmmmmmmmmmm...

tuna (good for babies brain development!) mixed with butter beans, chopped celery, onion and tomato mixed with viaigarette it doen't sound very nice but is delicious especially if you add lots of butter and pepper to the potato

Corned Beef..................... Great.

Hows about trying a couple of spoonsful of your favourite Chicken Tonight ready mixed sauce. Different and left overs can be kept for a day or two in a very cold fridge.
