Here is a very simple and healthy recipe, happy cooking!

<<<<< Salmon Cutlets with Pineapple Salsa >>>>>> (Serves 4)

4 Salmon cutlets, cut 2.5 cm in thick
pepper + salt

1) Preheat barbecue (oven) to a medium heat.
2) Sprinkle salt and pepper on Salmon cutlets
3) Cook salmon cutlets on lightly oiled barbecue grill for 3-5 minutes each side or until flesh flakes when tested with a fork.

Pineapple salsa

160 g fresh pineapple, roughly chopped
2 spring onions, finely chopped
1 fresh red chili, seeded and finely chopped
2 tablespoon lemon juice
2 tablespoons finely chopped fresh mint

Put all the ingredients in a food processor or blender and process to combine. Serve at room temperature with salmon cutlets & boiled vegetables

Grilled salmon with red onion, coriander, pineapple and chilli salsa.



Serves 4



Preparation time 30 mins to 1 hour

Cooking time 10 to 30 mins






Ingredients
For the salsa
1 red onion, finely chopped
1 small pineapple, finely chopped
1 small red chilli, finely chopped
handful coriander leaves
75ml/2?fl oz olive oil
salt and freshly ground black pepper
For the glaze
2 tsp light soy sauce
1 tbsp lemon juice
50g/2oz brown sugar
pinch chilli flakes
4 x 200g/7oz salmon fillets



Method
1. For the salsa, combine the red onion, pineapple, red chilli, coriander and olive oil in a small bowl. Add salt and freshly ground black pepper to taste. Leave in the fridge for about an hour for the flavours to combine.
2. Preheat the grill to hot.
3. In a small saucepan, for the glaze, combine the soy sauce, lemon juice, brown sugar and chilli flakes. Bring to a simmer and cook for one minute until just starting to thicken; put aside to cool before using.
4. Season the salmon with salt and freshly ground black pepper and then place on a baking sheet and grill it until cooked all the way through - about ten minutes.
5. Once the salmon is cooked, brush with the glaze. Serve the salmon at once along with the salsa.

This is delicious.

Use fresh lemon juice, and then sprinkle on paprkia, coriander, and summer savory (might jsut be called savory). Yum!

put soy sauce and some pepper. it tastes wondeful

get cedar planks, soak them in water so they don't burn on the grill, place the salmon fillets on the planks on the grill,

prepare a sauce by mixing brown sugar and melted butter,

Just before the salmon is done, spread this sauce on the Salmon (it should cook for 2 min or so with the sauce on it)

The result will be a sweet buttery salmon fillet that falls apart on your plate

if you don't have cedar planks, just use alluminum foil to keep the fish from falling apart and falling into the grill, if you do use cedar planks, have a water bottle ready and attend the BBQ very closely, the edges of the planks may catch fire as they dry out, just squirt them with water as this happens.

A lady demonstrating how to cook fresh salmon at Sam's told me just to sprinkle it liberally with lemon pepper and top with thinly sliced green onion (scallions) or red onion rings and bake it till it easily flakes with a fork. I imagine that same thing would work on a grill. I know it is delicious baked in the oven!

Really Easy and Good Grilled Teriyaki Salmon Steaks:

1? hours 1? hours prep
6 servings

5-6 salmon steaks
1 cup soy sauce
3 tablespoons brown sugar
1 tablespoon mustard powder

1. In a, bowl, mix/whisk together soy sauce, brown sugar and mustard powder.
2. Place the salmon steaks in a glass dish (I use an 8x8-inch glass baking dish).
3. Pour the marinade over the salmon.
4. Cover with plastic wrap, and refrigerate for minumum 1-1/2 hours, turning the steaks occasionally.
5. Grill for 4-5 minutes on each side, depending on how thick the steaks are.
6. Brushing with marinade as they cook.
7. **NOTE** sprinkle with salt if desired when cooking.

Take some aluminum foil and spread with a little butter where the salmon will be. Place the salmon on the butter, coat the salmon with dill weed, sea salt to taste and a little black pepper. And squeeze the juice of 1/2 a lemon over the salmon. Wrap in foil and place on the hot grill until almost completely cooked, the fish will continue to cook for several minutes after being removed from the heat and you don't want to over cook the fish. - My mother who will not eat salmon begs me to make this dish for her! I hope you like it as well.

I can't claim this as my own, but it is my very favorite salmon recipe. It is by Christine L. of Allrecipes.com. I haven't made salmon any other way since I tried this recipe. Hmmm, maybe I'll have it tonight...

Firecracker Grilled Alaska Salmon
8 (4 ounce) fillets salmon
1/2 cup peanut oil
4 tablespoons soy sauce
4 tablespoons balsamic vinegar
4 tablespoons green onions, chopped
3 teaspoons brown sugar
2 cloves garlic, minced
1 1/2 teaspoons ground ginger
2 teaspoons crushed red pepper flakes
1 teaspoon sesame oil
1/2 teaspoon salt
DIRECTIONS
Place salmon filets in a medium, nonporous glass dish. In a separate medium bowl, combine the peanut oil, soy sauce, vinegar, green onions, brown sugar, garlic, ginger, red pepper flakes, sesame oil and salt. Whisk together well, and pour over the fish. Cover and marinate the fish in the refrigerator for 4 to 6 hours.
Prepare an outdoor grill with coals about 5 inches from the grate, and lightly oil the grate.
Grill the fillets 5 inches from coals for 10 minutes per inch of thickness, measured at the thickest part, or until fish just flakes with a fork. Turn over halfway through cooking.
