TURTLE THUMBPRINTS

Just like the famous candy--pecans, caramel and chocolate team up in this bite-sized cookie.

Preparation time: 20 min
Baking time: 7 min

Yield: 4 dozen cookies

Cookie Ingredients:

2/3 cup LAND O LAKES? Butter, softened
1/2 cup sugar
2 egg yolks
1 teaspoon vanilla
1 1/2 cups all-purpose flour

Filling Ingredients:

20 caramels, unwrapped
2 tablespoons LAND O LAKES? Heavy Whipping Cream
48 pecan halves

Drizzle Ingredients:

1 cup real semi-sweet chocolate chips
1 tablespoon shortening

- Combine butter, sugar, egg yolks and vanilla in large bowl. Beat at medium speed until creamy. Reduce speed to low; add flour. Beat until well mixed. Cover; refrigerate until firm (at least 1 hour).
- Heat oven to 375°F. Shape dough into 1-inch balls. Place 1 inch apart onto ungreased cookie sheets. Make indentation in center of each cookie with thumb. (Edges may crack slightly.) Bake for 7 to 10 minutes or until edges begin to brown. Cool completely. Store cookies in a container with a tight-fitting lid for 2 to 3 days or freeze for up to 2 months.
- On serving day, combine caramels and whipping cream in medium microwave-safe bowl. Microwave on HIGH 1 minute; stir. Continue microwaving 1 minute or until melted; stir until smooth. Spoon about 1/2 teaspoon caramel mixture into center of each cookie. Top with pecan half.
- Place chocolate chips and shortening in small microwave-safe bowl. Microwave on HIGH 1 minute; stir. Continue microwaving 30 seconds or until melted; stir until smooth. Drizzle over cookies. Let stand until set (about 2 hours).

- Recipe Tip
To store drizzled cookies, arrange cookies between layers of waxed paper in a container with a tight-fitting lid. Store at room temperature for 1 to 2 days or freeze for up to 2 months.
- Recipe Tip:
Place cookies on a cooling rack over a piece of waxed paper to catch any extra chocolate drizzle.
- Recipe Tip:
If caramel filling gets too thick, reheat in microwave for 10 to 15 seconds until it becomes spoonable again.

(makes 3 dozen)

Ingredients:
1 cup butter, softened
1 cup sifted powdered sugar
2 cups al-purpose flour
1 cup finely chopped pecans
1 tablespoon vanilla extract

*Praline Filling

Directions:
Preheat oven to 375 degrees.

- Cream butter; gradually add powdered sugar, beating well at medium speed of electric mixer. Add flour, mixing well. Stir in pecans and vanilla.
- Shape dough into 1 inch balls; place about 2 inches apart on ungreased cookie sheets. Press thumb in center of each cookie to make indentation. Bake for 15 to 17 minutes; do not brown. Cool on wire racks. Spoon about 1/2 teaspoon Praline Filling in to each cookie.

*Praline Filling

Ingredients:
1/2 cup butter
1 cup firmly packed brown sugar
dash of salt
1/2 cup evaporated milk
2 cups powdered sugar
1/2 teaspoon vanilla

Directions:
Melt butter in a medium saucepan. Add brown sugar and salt; bring to a boil. Boil for 2 minutes, stirring constantly. Remove from heat; stir in milk. Bring mixture to a boil, and let boil for 2 minutes or until 232 degrees.
- Remove praline mixture from heat. Cool to lukewarm. Stir in powdered sugar and vanilla; beat with a wooden spoon until mixture is smooth.

i love the chocolate chip cookie recipe on the back of the crisco cans. they're really good.

You can even do a search by what ingredients you want or don't want. And there's reviews by people who have made it so you can get an idea of what to expect too. I even found a recipe on there for homemade fortune cookies! If there's something new I want to try, for meals or deserts, I always look it up on there.

OLD FASHIONED SOFT SUGAR COOKIES

Sift together in large bowl:

3 1/4 cups flour
1 teaspoon soda
1/2 teaspoon salt

Add:

1/2 cup soft butter
1 cup sugar
1 egg
1 teaspoon vanilla or nutmeg

Beat at medium speed for 2 minutes.

Add:

1/2 cup thick sour cream
sifted flour mixture

Preheat oven to 375-400F degrees.
Beat at low speed until well blended (1 1/2 minutes). Roll out lightly on floured board to 1/4 inch thickness. Cut and sprinkle with sugar.

Put on prepared cookie sheet. Dot a raisin in the middle and bake about 12 minutes at 375-400 degrees.

OLD - FASHIONED OATMEAL COOKIES

1 c. (2 sticks) unsalted butter, room temperature
1 1/2 c. packed dark brown sugar
3 tbsp. honey
2 eggs
1 1/2 c. unbleached all-purpose flour
1 tbsp. ground cinnamon
1 tsp. salt
4 c. old-fashioned rolled oats
1 1/2 c. chopped pecans
3/4 c. each raisins, chopped dates

Preheat oven to 375 degrees. Lightly butter cookie sheets. Cream the butter and brown sugar in a large mixer bowl. Beat in the honey and eggs until smooth. Sift the flour, cinnamon, and salt together. Stir into the butter mixture with a wooden spoon. Add the oats, pecans, raisins, and dates; stir until well mixed.
Shape the dough into 2 inch balls. Place about 9 balls on each cookie sheet, then flatten each with the palm of your hand to make large cookies. Bake until lightly browned, about 15 minutes. Immediately remove the cookies to wire racks to cook completely. 2 dozen large cookies.

OLD FASHIONED CHOCOLATE CHIP COOKIES

1 1/8 c. sifted flour
1/4 tsp. baking soda
1/2 tsp. salt
1/2 c. solid Crisco
1/4 c. brown sugar
1/2 c. granulated sugar
1 egg, beaten
1 tsp. vanilla
8 oz. semi-sweet chocolate bits
1/2 c. walnuts

Sift flour, soda and salt together. Set aside. Cream shortening and sugars together. Add egg and vanilla, blend thoroughly. Add sifted ingredients. Fold in walnuts and chocolate bits. Drop from teaspoons onto greased baking sheet. Bake in 350 degree oven about 10 minutes. (I always double the recipe.)

Simplest things are often the best. Preheat oven to 350 and grease a cookie sheet. Cream 1 stick butter-or-marg with 1 cup white sugar. When fluffy beat in 1 large egg, then 1 tsp good vanilla, 1/4 tsp salt, 1/2 tsp baking powder. Gradually add about 1 1/2 to 2 cups plain flour, combine till no lumps remain & mixture is stiff but still mixable. Drop the dough in tbsps on the cookie sheet and bake until Just starting to color - about 12 mins. Remove from oven & cool on a wire rack.

Meantime make chocolate icing - cream 1/2 stick butter with 1 cup confectioner's sugar and 1/8 cup good quality cocoa powder plus a drop of vanilla, beat till spreadable, add a bit of milk if needed. When the cookies are cool frost each with a tsp of chocolate icing. Pop a pecan or walnut half on top of each.

If you sprinkle these with cinnamon sugar instead of icing them, you've got snickerdoodles.
