What's your favorite ingredients for plain stuffed or deviled eggs?

I like them plain with mayonnaise, a little salt & white pepper with, maybe, just a tiny pinch of cayenne. All that other stuff, minced onion, pickle relish, mustard, etc., just hides the flavor of the egg but curious what other cooks use to make their stuffed eggs special.

I love this recipe. It's beautiful and tastes really delicious. You put whole hard boiled eggs in a food processor or blender and the flavor is just wonderful. I use the optional dill, but that's it.

Deviled Eggs in Mini Phyllo Shells

2 packages of mini Phyllo Shells
6 hard boiled eggs, shelled
1/2 cup mayonnaise or salad dressing
1 Tbsp. prepared mustard
2 teaspoons white vinegar (or sweet pickle juice)
1/4 teaspoon salt

Optional Fillings
1/2 teaspoon dry dill
2 teaspoons horseradish

Optional Toppings
Chives
Paprika
minced ham
crumbled cooked bacon
strip of stuffed green olive

Place whole eggs (yolks and whites) in a food processor and puree. Add the mayonnaise, mustard, vinegar (or pickle juice) and salt (and any of the optional ingredients). Fill 30 Mini Shells with the Deviled Eggs mixture, and garnish as desired with optional toppings. Makes 30 appetizers

I dont like eggs but my brother adds pepperoni to it.

I completely agree with you! Just a little mayo, salt and pepper works for me. If I want to get fancy I add in some cream cheese and garlic. I'm allergic to onions and I hate pickels so I can't eat the deviled eggs that most people make. I love making my own though!

A Salt, Pepper and Ranch Dressing, Sorry but I think that is much better than Mayo. And I love mayo

LITE SPINACH-BACON DEVILED EGGS

1 dozen eggs, hard cooked and peeled
1/2 cup frozen chopped spinach, thawed and drained, squeezed dry.
1/4 cup mayo
1/4 cup bacon bits
2 1/2 tbsp cider vinegar
1 tbsp sugar
2 tsp black pepper
1/4 tsp salt

Cut eggs in half lengthwise, scoop out yolk and mash with a fork. Add remaining ingredients and mix well. Spoon yolk mixture into egg halves. Chill until ready to serve (should chill 2 hours to overnight to let the flavors blend.)

DEVILED EGGS

12 eggs, hard-boiled
1 cup Miracle Whip
1 teaspoon prepared mustard, optional
1 teaspoon salt
2 tbsp. paprika, optional

Cut eggs in half and remove the yolks. Mash with a fork then add the rest of the ingredients. Mix should be slightly moist.
Spoon about 1-2 tablespoons of the filling into the egg whites or use a pastry bag to pipe the filling into the whites.

Sprinkle with paprika, if desired. Cover and chill for at least one hour. Serving Size: 24.

DEVILED EGG POTATO SALAD

9 hard boiled eggs, peeled
1/2 c. chopped onions
1/4 c. shredded pimentos
1/4 c. shredded green pepper
1/2 c. mustard
1 tbsp. salt
6 c. boiled potatoes, cubed
1/2 c. shredded dill pickles
1/4 c. shredded celery
1 c. mayonnaise
1 tbsp. paprika

Cut 6 boiled eggs in half; remove yolk. Place yolks in bowl and mix with 1 teaspoon pickles, 1 teaspoon mustard, 1 tablespoon mayonnaise, dash of salt; stiff eggs with the yolk mixture. Set eggs aside.
Mix potatoes with remaining ingredients. Add eggs (flaked with fork) last. Top with paprika and arrange deviled eggs around top of salad for decorative look.

CRAB HELL - THE ULTIMATE DEVILED EGG

12 hard boiled eggs
1/2 c. mayonnaise
2 tbsp. prepared mustard
1/4 tsp. salt
1/8 tsp. black pepper
8 oz. fresh crab meat
Paprika

Cut each egg in half (lengthwise). Remove yolks, mash them and add the mayonnaise, mustard, salt and pepper. Mix well. Break the crabmeat into small flakes and add. Heap the egg whites with the mixture and garnish with paprika. Next time: Double the recipe! These evaporate!

I used to do mine with mayo only also until a few months ago I found a delicious recipe! To the yolks I add neufshatel (sp?) cream cheese, a little mayo, a little sugar. It is devine and I won't go back to mayo alone anymore!

I like them with just a little mayo, salt & pepper to taste and a shot of Paprika .. thats it

I like a little bit of dry mustard in the mix.

I saw a chef on TV put lump crab meat in them once and that looked intriguing.

I grew up eating it made w/ dry mustard, mayo & sweet pickle relish, salt & pepper. You get the taste of the white w/ the enhanced taste of the yolk. I still make it like this b/c it's reminiscent of home. :)

Miracle Whip, Dijon mustard, a bit of dill relish. And my mom's secret...a capful of white vinegar. Then garnish with a green olive and paprika. (Although I use some black olives to make the platter pretty and for people who don't like green olives.)
