Easy Bruchetta

INGREDIENTS

1 French baguette
1 tablespoon olive oil
2 roma (plum) tomatoes, thinly sliced
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh oregano
1 teaspoon garlic powder
1 pinch ground white pepper
1 (8 ounce) package sliced mozzarella cheese
1 (6 ounce) package sliced provolone cheese

DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C).

Slice the baguette into 1/2 inch thick diagonal slices. Arrange the slices in a single layer on a baking sheet. Brush both sides of each slice with the olive oil. Place tomato slices and a sprinkling of basil and oregano on the bread slices. Sprinkle the tomatoes, basil and oregano with the garlic powder and white pepper. Cover the tomato slices with slices of the mozzarella and provolone. Place more basil, oregano and tomato slices on top of the cheese.
Bake in the preheated oven for 7 to 10 minutes, or until the cheese is bubbly.

Ingredients:

* 1 large Aubergine, cut lengthways into thin slices
* 10 cherry Tomatoes, halved
* 4 tbsp Hummus
* 2 small Ciabattas, cut lengthways
* 1 tbsp Olive oil

Method:

* Barbecue aubergine slices for 8-10 minutes on each side.
* Meanwhile, mix tomatoes with Hummus in a bowl and set aside.
* Barbecue cut ciabattas for 3 minutes or until golden.
* Spread each piece of ciabatta with Hummus mixture and top with aubergine slices.

1 (32-ounce) can whole tomatoes, drained
1 cup fresh basil leaves, washed and spun dry
4 tablespoons extra-virgin olive oil
6 cloves garlic, peeled
Kosher salt and freshly ground black pepper
2 large French baquettes, sliced 1-inch thick (about 36 slices)
1 1/2 pounds fresh mozzarella cheese, sliced 1/4-inch thick

Preheat oven to 375 degrees F.
In the bowl of a food processor, add drained tomatoes, 1 cup basil leaves, olive oil and 2 cloves garlic. Pulse until smooth, but somewhat chunky. Season with salt and pepper.

On a baking sheet, line up baguette slices. Toast in oven for about 3 minutes or until light golden brown. Working quickly, rub the remaining garlic on the toasted side of each slice and then lay a piece of mozzarella cheese on top. Place bread back in oven and melt cheese slightly, about 45 seconds. Remove from oven and spread one tablespoon of the tomato mixture on each piece.

You will need inch-wide slices of Italian bread. Cut the bread on a 45 degree angle for the best results.
Toast the Bread
The word bruschetta comes from the Italian term "to roast over coals." So, the most important part is to toast the bread. In modern times, a toaster, broiler, or grill works just fine. I'm placing my bread on a grill. Flip the bread over, and toast it on both sides.

Meanwhile, cut a head of garlic in half. Peel off the excess skin on the garlic.
Season the Bread
Once the bread is toasted, rub the slices with the garlic. For a plain and simple bruschetta, brush on some extra virgin olive oil, sprinkle some salt and pepper, and serve.
Try Different Versions of Bruschetta
You can make different variations of bruschetta. One possibility is to rub the bread with a cut tomato after rubbing it with garlic.

BRUSCHETTA MOZZARELLA

1 loaf Italian bread
1/3 c. olive oil
1 clove garlic, minced
1/2 tsp. salt
1/4 tsp. coarse ground pepper
1/2 c. thinly sliced green onions
3/4 c. chopped tomatoes
1 1/2 c. (6 oz.) shredded low moisture Mozzarella cheese

It is absolutely delicious!! I've made it a few times...you won't be disappointed.

get a fresh baguette bread....cut on an angle...that gives you more of a surface area.
brush with olive oil, and a bit of pepper and salt...put in oven on a cookie sheet at 450 and WATCH CAREFULLY so they don't burn. remove when done and let cool a bit to crisp up
get ROMA tomatoes (less seeds)...
red onion
garlic (storebought chopped is fine)
oregano (dried is better than fresh, its the one herb that is like this)
lots of fresh basil leaves, rolled together and thinly sliced (chiffonade)

fresh parmesan, finely grated
good olive oil

You may want to go crazy and when you first cut the tomatoes, remove the juice and seeds.....it's not hard at all, and makes the bruschetta much nicer and less runny.

chop tomatoes and onion to the size you want...salt them and pepper them...add in chopped garlic, olive oil, oregano to taste and some of the parm, making sure you have enough to top the breads.

top the toasted bread with the mixture, then parm, then some basil slices.
heat in a hot (450) oven for a few minutes.

You can substitute feta chees for the parm, and it goes right in with the mix if you like.

Experiment..try your OWN changes...

Another thing to add in which will really heighten the tomato taste, is sundried tomatoes. Buy them in OIL...and slice them thinly to add to the mixture...a real treat.

yes, it is as easy as 1,2,3. dice 3 large tomatoes into small pieces, add this to a mixing bowl with 1/2 chopped large red onion, 5 leaves of basil and 1 clove garlic chopped finely and salt and pepper. add 1/3 cup olive oil and you are done. refrigerate til ready to use.

roast some medium sliced ciabatta bread, them rub some peeled fresh garlic on them.
in the meanwhile mix in a bowl:
diced tomatoes (cherry toms are the best)
origano and basil
touch of chilly, salt and pepper
a good extra vergin olive oil

top your bread with it... enjoy!
