When i make hamburger patties they fall apart!!?

everytime i make them once they start to cook they crumble.......and id like to cook them on the grill so how do i keep them together?

I used to have the same problem. It's too much liquid going on. Try to cut down the liquid sauces you add and go with powder stuff instead. Also, try leaner beef as it could be all the fat from the beef that's doing it. In my case, I used too much BBQ sauce. Good luck!

You are trying to flip them too soon. Be care full because hamburgers love to make a grill flame up. If you are over charcoal a squirt bottle filled with water can be a real help. Let the hamburgers sit a be patient. You do not want them black on the bottom, but you do want color there.

You need to make them a bit thicker and pack them more tightly/round them out with your hands. Also, make sure your grill is nice and hot before you put the meat on. Once on the grill, don't flip them back and forth. Only flip the patty once and let it cook on each side for about 5-7 minutes.

You should only add egg or bread crumbs to ground beef if you are making meatloaf.

It helps to shape them first and then put in the freezer, then when they cook up they will keep their shape. If you don't have a lot of time, try to freeze for 15-30 minutes first.

Hamburgers and meatballs both need egg to hold them together.

In a bowl beat an egg. Add your hamburger. Add seasoning that you like. I usually add a little parmasan cheese, pepper, garlic powder, and parsley. Add 1/2 cup-1 cup of breadcrumbs (depending on how much meat there is).

Using your hands, mix it all together. If it's still too eggy you can add more breadcrumbs.

Then make your hamburgers. They will not fall apart.

I use an egg and oatmeal. thte egg holds it all together and the oatmeal makes them very moist. very good!

One solution is to add a little flour to your meat and mix it very well.; however, for the best results, when you form your patties be sure they are packed tightly. The best way is to take a jar lid, put plastic wrap over it, then stuff it tightly with the meat and gently lift it out of the lid. Repeat. Refrigerate patties for at least an hour before grilling. You may not be patty(ing)? them long enough (kneeding). You can try hamburger with more fat content or even try adding an egg. the egg will act as a binder.

Try adding an egg or mold tightly with hands. Place in the refrigerator to solidify. I use 85% lean but if you use a meat consistency of higher fat -- you'll have no problem keeping it together because of the grease.

Add a beaten egg or a tablespoon of milk to your meat mixture.

The ground beef can be neither too dry nor too wet, so don't use lean ground beef and don't add too much sauce to the mix and the patties should be fine. Use regular ground beef and don't add more than 2-4 tablespoons of sauce per pound. You do NOT need to add egg and/or bread crumbs to make the patties keep their shape unless you want them to taste like meatloaf. Yuck.

put the ground meat in a bowl.
mince some onions and garlic
add bread crumbs
break an egg over it all and knead
form patties
add herbs and spices to taste
they probably won't crumble.

You need to buy the more expensive hamburger. I believe that the hamburger you are using has too much fat in them and that is whats making them fall apart.
