What is a good summer meal to make for a family with a new baby?

We're in Texas, so its hot here. I don't want to make anything to heavy. Thanks!

I use recipes like these when its hot
Italian Beef Salad Recipe

1 lb. rare roast beef from the deli, sliced in 1/2" strips
2-4 T. extra virgin olive oil
juice of 1 lemon
freshly ground black pepper
2 T. tiny capers (optional)
1/2 C. whole black Greek (oil cured) olives
1/3 C. parmesan cheese
6 C. mixed salad greens
2 C. steamed broccoli florets

Prepare the broccoli florets first. Steam until crisp-tender and run cold water over them.

Arrange the mixed greens on a large serving platter. Ring the broccoli florets around the edge, on top of the greens. Drizzle 1-2 Tbsp. olive oil over the broccoli and greens, then sprinkle with 1/2 the lemon juice. Salt and pepper, to taste. Heap the roast beef strips inside the broccoli ring. Drizzle with 1-2 Tbsp. olive oil, sprinkle with the remaining lemon juice. Salt and black pepper, to taste.

Sprinkle the capers and Greek olives over all. And top with the parmesan cheese.

Serve the salad on the platter divide onto individual plates.



Texas Shrimp and Rice Salad

4 1/2 cups water
1 1/2 pounds unpeeled small shrimp, uncooked
1 1/2 cups cooked rice
1 can cut green beens, drained
1/2 cup pitted ripe olives, drained
1/3 cup chopped green onions
1/2 cup Italian dressing
3 tablespoons chili sauce
1/2 teaspoon dried basil
1/4 teaspoon pepper
1/8 teaspoon garlic powder
curly salad greens

Bring water to boil in large pot; add shrimp and return to boil. Reduce heat and simmer 3-5 minutes. Drain shrimp well and rinse with cold water. Cool shrimp; peel and devein.

Combine shrimp, rice, beans, olives and onions; toss well. Combine salad dressing with seasonings; mix well. Pour over rice mix and chill.

Serve over salad greens.

Serves 6-8.


BLT Salad with Avocado Dressing

Dressing:
1 large ripe avocado, peeled, mashed
1/2 cup dairy sour cream
1/4 cup milk
1/4 cup mayonnaise
1 tablespoon lemon juice
1/4 teaspoon garlic salt
2 drops hot pepper sauce (optional)

Salad:
3 cups torn or shredded lettuce
3 medium tomatoes, cut into wedges
1/2 pound bacon, crisp cooked, crumbled
3/4 cup croutons, if desired

In small bowl, combine all dressing ingredients; beat at low speed until smooth. Cover and refrigerate for several hours to blend flavors. At serving time, arrange salad ingredients on 6 individual plates or toss in large salad bowl. Serve with dressing. Serves 6.

How about a nice green salad with cold cooked pasta (like rotini) mixed in with some sort of chopped cold cuts in it or grilled chicken.

Invite them, or better yet, go to their house and grill out. Grill up some veggies, chicken or fish or whatever they like and have a nice cold potato salad.

I'd LOVE it if someone would have done that for us! That way, they are at their house with all the baby's things so his schedule won't be disturbed and they can relax while you do the cookin! =)

how about a garden salad, surrounded by hard boiled eggs, or deviled eggs, and a bowl of fresh fruit? that sure sounds good to me on a hot summer day.

Quick and Easy Chicken Spaghetti

INGREDIENTS

1 (12 ounce) package angel hair pasta
1 (10 ounce) can diced tomatoes with green chile peppers
1 (10.75 ounce) can condensed cream of chicken soup
3/4 (8 ounce) package processed cheese, cubed
2 cups chopped cooked chicken breast
1/2 (4 ounce) jar sliced mushrooms, drained
salt and pepper to taste

DIRECTIONS

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and return to pot.
To the pasta add the diced tomatoes with green chile peppers, cream of chicken soup, processed cheese, chopped chicken, mushrooms, salt and pepper. Cook and stir over low heat until cheese is melted and mixture is heated through.

Summer Spaghetti

1 16oz package thin spaghetti, broken in half
3 medium tomatoes, diced
3 small zucchini, diced
1 large cucumber, seeded and diced
1 medium green pepper, diced
1 8oz bottle Italian salad dressing
2 tablespoons grated Parmesan cheese
1 1/2 teaspoons sesame seeds
1 1/2 teaspoons poppy seeds
1/2 teaspoon paprika
1/4 teaspoon celery seed
1/8 teaspoon garlic powder

Cook spaghetti according to package directions; drain and rinse in cold water. Place in a large bowl; add tomatoes, zucchini, cucumber and peppers. Combine remaining ingredients; pour over salad and toss to coat. Cover and refrigerate for at least two hours.

Serve with warm french bread.
