Does anybody Know the recipe for homemade Doritos or Nacho Chips from scratch?

I'm opening a Mexican restaurant in Brazil and would like to make Doritos or Nacho chips from scratch. The "Massa Harina" is not sold in Brazil, the closest ingredient I've found is Corn Meal, please help I have been looking for months for this recipe...

Without masa harina you are going to have a hard time making a decent dough for chips. If hominy (pozole in Spanish) is available, either dried or canned, you can grind it in a food processor to make the masa. Hominy is easy to make, but the process is time consuming and probably can't be done economically in a restaurant. I have made tortillas and tostadas from masa harina but not from corn meal. You might be able to make a masa from corn meal but you will have to cook the dough before you can make chips for frying. I would suggest mixing the corn meal with water and baking in a low oven in a covered pan for an hour. I don't know if this will make a workable dough but if it does the chips that you make from it will not taste like the nacho chips made from masa harina.

well "nacho chips" are deep fried corn tortillas cut into triangles.
as for the doritos - that is some sort of seasoning with dried cheese and a lot of additives. I guess it would be experimentation on your part to find a seasoning you are happy with . I personally like salt sprinkled on them
Doritos are kind of gross if you ask me.

Chili's Fajita Nacho's

16 tortilla chips (Large and whole, not broken)
1 (1 ounce) envelope of mccormicks fajita seasoning mix
1 uncooked boneless chicken breast (cut in strips)
1 vidalia onions (cut in half and sliced)
1 bell pepper (cut in half, deseeded, then sliced into strips)
1 jalapeno (deseeded and cut in slices)
1/2 cup monterey jack cheese (shredded)
1/2 cup mild cheddar cheese (shredded)
1 cup lettuce (shredded)
1/2 cup of pace thick & chunky salsa
2 tablespoons sour cream
2 tablespoons guacamole (optional)

Saute Chicken, Onion, & Peppers as directed on the Fajita seasoning pack.

When done, drain mixture and set aside.

Place Tortilla Chips in a circle on a large plate or platter that is Oven proof or Microwaveable.

Layer Chicken, Onions, & Peppers on top of the Tortilla Chips.

Next, Layer Shredded Cheeses on top of the chicken, and top with Jalepenos.

Place plate in oven (350° just until Cheeses are melted) or microwave on medium.

When Nachos are ready, add the shredded Lettuce (in the middle of the plate or platter).

Top the Lettuce with the Salsa & the Sour Cream (and if you like, add Guacamole).

Grab a cold one and Enjoy!

Homemade tortilla ("nacho") chips:

Ingredients

12 corn tortillas, cut into quarters
Vegetable oil if deep-frying
1 teaspoon salt

Directions

1. To fry the chips, add enough oil to come halfway up the sides of a large heavy pot or electric deep fryer and heat over high heat to 360° F.
2. In batches, without crowding, deep-fry the tortillas until golden brown, turning once, 2 to 3 minutes. Using a slotted spoon, transfer to paper towels to drain.
3. Sprinkle lightly with salt to taste while still hot.
Serve immediately.
Yield: 48 chips

As far as Doritos I have searched and come up with nothing, however...Maybe with a little tweaking this might work. I am posting 2 recipes for nacho cheese popcorn...Perhaps you can use this as a base and experiment to get the seasoning for your nacho chips:

P.S. I would stick with the plain chips (serve 'em up with things like homemade guacamole, salsa, and pico de gallo)...they are the best!

it is just fried corn chips, which I assume is just ground maiz, which is corn.
If you go to mexican restaurants now you will see how it is done. They deep fry it, then strin out and put under a hot lamp, to keep warm, sprinkle salt or any other ingredients and toss. Voila' chips a la tortilla or dorito.
I would suggest you try combination of ingrdients. Read the back of dorito bags to see what specific ingredients they use.
